大人味的黑森林蛋糕!自製酒漬櫻桃使用 Black Forest Cake

  • 其實小時候我很討厭黑森林蛋糕,如今看著自己手中變出了一顆完整的黑森林蛋糕,感覺好不可思議!德國人對黑森林蛋糕的規範,徹底引起我對黑森林的興趣。因為酒精跟鮮奶油都是我熱愛在甜點中看見的元素!於是我從買櫻桃開始,假裝我只是想做酒漬櫻桃,其實一切都是在為了黑森林鋪路,就這樣一步一步,終於吃到黑森林蛋糕了。
    :食譜:
    食材▼
    ○蛋糕麵糊
    全蛋 3 顆
    低筋麵粉 60 g
    可可粉 10 g
    玉米澱粉 5 g
    砂糖 60 g
    無鹽奶油 20 g
    黑巧克力 10 g
    鹽 1/8 小匙
    ○內餡
    酒漬櫻桃 200 g
    鮮奶油 350 g
    糖粉 35 g
    香草籽醬 1 小匙

    新鮮櫻桃 8 顆

    I used my homemade rum-soaked cherry to make this black forest cake. It’s so good!

    Ingredients▼
    ○Batter
    egg, 3
    cake flour, 60 g
    cacao powder, 10 g
    cornstarch, 5 g
    granulated sugar, 60 g
    unsalted butter, 20 g
    chocolate chips, 10 g
    salt, 1/8 tsp
    ○Filling
    rum-soaked cherry, 200 g
    heavy cream, 350 g
    powdered sugar, 35 g
    vanilla bean paste, 1 tsp

    ○Topping
    fresh cherry, 8
    chocolate bar, 200 g
    :Instruction:
    ●Making the Batter
    1. Melt butter over low heat.
    2. Pour melted butter into a small bowl with chocolate chips.
    3. Stir to melt chocolate chips.
    4. Brush a thin layer of melted butter on the baking mold.
    5. Line the baking paper on the bottom and the side.
    6. Sieve flour, cacao powder, cornstarch, and salt.
    7. Crack three eggs into the mixing bowl.
    8. Beat eggs on high for 8 to 10 min.
    9. Add granulated sugar while beating eggs.
    10. Whip until the mixture falls off the whisk in a thick ribbon that doesn't disappear for 3 seconds.
    ●Preheating the Oven
    11. Add chocolate and butter mixture.
    12. Gently fold to mix the mixture.
    13. Add sieved dry ingredients.
    14. Gently flip the mixture from the bottom to mix well using a whisk.
    15. Pour batter into the lined baking mold.
    16. Transfer to the preheated oven.
    17. Bake at 350℉/180℃ for 30 min.
    ●Making the Filling and Decoration
    18. Pour heavy cream into a mixing bowl.
    19. Add powdered sugar and vanilla bean paste.
    20. Mix the mixture manually.
    21. Then whisk with an electric mixer until formed peaks.
    22. Transfer to a fridge until need to use.
    23. Spoon several Tbsp juice of rum-soaked cherry.
    24. Shave a chocolate bar with a little knife.
    ◆30 min. later◆
    25. It's done if you insert a pick and come out clean.
    26. remove the cake from the baking pan after cooling down completely.
    ●Assembling
    27. Place a piece of cake on the wooden board.
    28. Brush the cherry juice thoroughly on the cake.
    29. Add a thick layer of whipped cream and spread out evenly.
    30. Place rum-soaked cherries.
    31. Cover with whipped cream.
    32. Place the second piece of cake on the top.
    33. Brush the cherry juice thoroughly on the cake.
    34. Spread a thick layer of whipped cream on the top and the side.
    35. Thoroughly coat shaved chocolate on the top and side.
    36. Place 8 small pieces of whipped cream on top.
    37. Place fresh cherries on top of the whipped cream.
    38. Sprinkle some powdered sugar.
