- Bibingka is a classic Filipino rice cake that’s especially popular during the Christmas season, soft and spongey texture and is made with rice flour, glutinous rice flour, sugar, egg, butter, salted duck egg, coconut milk and salted cheese. During the Christmas season it is sold outside of churches during the nine-day Misa de Gallo. it’s normally Consumed as breakfast after the mass or as a evening snack with a cup of hot coffe.

HOW TO COOK BIBINGKA
INGREDIENTS:
1 cup rice flour
1/4 cup glutinous rice flour
1/2 cup sugar
1 1/2 tsp. baking powder
1 pc. egg
1/4 cup melted butter
3/4 cup coconut milk
salted egg and cheese (toppings)
DIRECTIONS
Prepare the banana leaves by heating in the stove until slightly wilted. Line the wilted banana leaves in (muffin) molds and cut the excess.
In a large mixing bowl, add the rice flour, glutinous rice flour, sugar and baking powder. Mix the ingredients well. In a separate bowl, add the egg, melted butter and coconut milk. Mix the ingredients well.
Combine the dry and wet ingredients and whisk to fully-blend. ‘
Pour ¾ of the banana leaf mold with the bibingka batter. Top with your favorite toppings.
Bake in a pre-heated oven for 15 to 20 minutes at 200C.
Top with grated cheese and grated coconut. Serve and enjoy!

I tried this recipe its sooo good! Pero hindi masyado umalsa katulad nyan, dahil kaya turbo broiler (taas lang ang source ng heat) ang gamit ko? Wala kasi ako oven..

Almost same po. Kahit kinabukasan na ay hindi naman tumigas. Moist pa rin po.

I've tried this with evap and okay naman po ang lasa, almost same but i still like the coconut milk more. I think good for 2 days lang siya or overnight if wala sa ref.
Hi ! I have a problem, it'll be my first time to make bibingka and I cant find rice flour here. There's only glutinous rice flour. Any recommendation for the possible alternative or brand for specific rice flour? Thank you. :(
Just mix glutinous flour and all purpose flour to make.

Hindi ko pa po natry pero based on the ingredients na most pancake mix, ang magiging outcome nia is more like cupcakes.

@@deliaespinoza1254 kahit all purpose flour po but make sure na active yung baking powder nyo para umalsa..
to check if the baking powder is active:
lagay nyo po ng tubig then kahit ilang drops ng vinegar and the result should be bubbly/mabula pag hindi po bumula means dina active you need to buy new and active one.

Yes po. I tried using evaporated milk, pero mas gusto ko pa rin ang lasa ng coconut milk para sa bibingka. 😉
Kung may coconut milk na sya tapos lgyang ng fresh milk? Sorry ang kulit ko...
@@lj689 yes po. Bale hatiin nyo na lang po yung portion para sa coconut milk. For example, 1/2 cup na coco milk at 1/4 na fresh milk. Or vice versa.

Gumawa ako nito pero wala kami banana leaf. Baking paper lang ang ginamit ko.
