Tortilla with egg + shred green onion / black pepper and cheese. As good as you can get if you dont want to get involved with the trouble to make that flour piece by yourself.

@@nyxhen-t7ldap 有些雞蛋,甚至有些不是很完好的蛋,比如說有裂紋不好整顆銷售,會被製作成蛋液或是烘乾做成粉狀,蛋粉比蛋液和新鮮雞蛋容易保存,效期也長一點,只是不如現打的雞蛋新鮮!
這家真的好厲害,之前沒看過這樣的蛋餅,想吃吃看,一定很香吧,油也不會重複用,這點很棒

剛看的時候也覺得為什麼一直翻,而且只煎一面?看了其他評論之後完全同意,就是要達到外酥內嫩,而且這種溫度蛋不熟是不可能的,半熟就疊起來,接著幾秒的時間蛋就熟透了但仍軟嫩,如果煎到全熟才翻面蛋大概也乾了。另外,一直移動蔥油餅位置可能表示下面爐火的溫度是不一樣的,應該不是店家閒著沒事做喜歡虐待自己的手。哈!

挖這家手工蛋餅看起來真好吃有機會一定要來試試看,心目中第一名的蛋餅其實是內湖的巴士蛋餅,會掉渣的那種吃起來相當幸福,是記憶中的味道,老闆可能退休又跑去衝浪了吧,祝福他快樂,也懷念當初那個記憶中懵懵懂懂的女孩。第二名要推薦土城的陳總涼麵的酥皮蛋餅,也是酥到會掉渣的那種餅皮,第一次吃到的時候也是相當驚艷,屬於可頌系列的蛋餅酥而不脆的口感,由於內湖巴士蛋餅沒有營業了,所以無從比較。第三名要給台北樂口福,也是皮酥內嫩型的蛋餅,但是缺點就是價錢比較高,不過聽說去年九月多的時候老闆也休息了,以後遇到類似的店家要好好愛護他們,有時就是吃一次少一次。

我覺得那個 分碗裝蛋的過程有改進空間 1. 那種敲蛋法 蛋殼容易掉進去 2. 你大可用大鍋 把這些調好 (當場讓人看到是現場做的) 最後用一個大瓢定量去出 可以省一點時間 和 空間
