It's called Byzantine to tell the difference between the time when Rome was primarily Latin and pagan or Latin influenced and we call the eastern romans Byzantines since Greek influence has been dominant and roman culture like legions for example where being replaced, I think the term byzantine is great since it represents change of a civilization throughout the centuries. Don't get me wrong I believe the Byzantines to be the heirs of Rome but ever since the rise of the Muslims and the empire having to adapt throughout the centuries created a more diverged culture than what their ancestors were.
