ingredients
sella chawal *rice 4 cups or 1 kg
soak for 1-2 hours
for masala bag*potli
coriander whole 2 tbsp
saunf(fennel seeds) 2 tbsp
cumin 1 tbsp
black cardamom 4-5
green cardamom 8-10
black pepper 1 tbsp
bay leaves *tez pattay 2-3
cinnamon stick *daar chini 2-3 sticks
whole garlic cloves 5-6
meat big shank pieces 1 kg or as more as you like
water 2-3 liter
for grinded garam masala
big cardamom 7-8
cumin 1 tbsp
black pepper half tbsp
grind all these together
for rice
boiled meat
boiled chickpeas*kabuli channa 2 cups
brown raisins *kishmish 2 cups soaked for 2-3 hours
fried onions half cup
mix masala
prepared yakhni *broth 4-5 cups
