The corn syrup helps the sugar not to overcrystalize but you can omit it instead of subbing the honey; most likely you burnt the caramel - it can go from perfect to burnt in just a few degrees so sometimes it best to stop it from cooking a few degrees lower than the recommended recipe (also, sometimes thermometers are not totally accurate). You should try it again!

I looked into other caramel apple recipes. A lot of the vegan ones use maple syrup or light brown sugar instead of corn syrup. I don't use corn syrup either. I love how you always dive right into new cooking adventures! I think it is great that you give yourself the chance to explore. 🍎❤
