Looking at the soggy noodles, they probably made the noodles way early before recording. So the soup got absorbed by the noodles.

God bless these people who take such pride in their food. That's what makes the food taste so good is their passion for cooking the food. It's insane how intensive it is but I give them such credit for what they do. Good job guys, please keep it up. We need people who cook like that instead of people who just cook stuff the day before and sell it the next day or even all week until they get rid of it all. It's gross, like the first people do, the food should be made fresh every day and should be made to order. Not having food sit around for God knows how long until somebody orders it.

There one gripe for me with Vietnamese noodle in the US. After all the normalization and trade, they still haven’t been able to put proper Pho noodle into a bowl of Pho. In many places we still have to settle for the thin, insubstantial pho noodle.
Start making it. You have a huge market out there to sell to. Quit bitching about it and become a millionaire noodle mogul.

08:24 So far, I'm not really into Japanese instant noodles cup. Because they tend to be more delicate and easy to get soggy if you soak it on hot water too long. Our nation instant noodles are more firm and got something to chew when you eat it. 😊

He is a very proud man. I am very proud he lives in my hometown. It was extremely hard in the late seventies when all the refugees came to Portland. Many religious groups helped them tremendously. The majority have made great lives for themselves withstanding racism,culture shock, and cold climate's for them. They are heroes.

Yes! But I think the Chinese accent differs from Vietnamese though.
I mean, the stereotype is based in fact. Accents from the same places generally sound similar.
"5:am wake up six days a week, complex broths made from scratch. People half their age wouldn't last long." Sounds like something someone who has never cooked before would say.. I'm less than half their age, been cooking for half my own age now. I wake at 4:am to get to work (on a military base) by 4:45 am, and I cook way more from scratch than just two broths every single day.. It's not hard if you know what you're doing, and I'm sure it's a piece of cake for those two who have been doing it forever. I bet their soups are delicious.
