Enjoying following the van build and will look great. Regarding the worktop, cut a few inches off the decorative end of the scrap piece and fix it vertically on the end you cut short so it sticks up above the worktop. This will stop things rolling off the worktop behind the drivers seat and give you the extra bit that you cut short.

Great job. I'm in the process of adding cabinets to my van too and I went with a similar set up off Amazon. Yes they are heavy but...they already figured everything out and it's all in the package. I have assembled several package deal in the past and understand the process. Good luck going forward.

I highly highly recommend getting to a weigh bridge at this point and seeing how much you way as it soon adds up over your 3.5t limit. Haha I bought the exact same IKEA kitchen with the same worktop and when realises how heavy it is I regret exactly like you did! My main worry was the fact in an event of a crash the worktop becomes a combination of a missile and a blade flying forwards and cutting you in half (xD) that's why I put 2 M8 bolts through it and 2 5mm massive L shape brackets and bolted it with another 2 m8s directly to my garage area barrier (25mm plywood) it's not perfect but a thousand times safer than having it just on wobbly chipboard kitchen unit. Never again any IKEA furniture in a van... I learned from my mistake but it works well in the end xD take care!

I've just fitted a Metod kitchen and, yes, they're bloody heavy. I wondered at the time, if I was to do a van build, that you could rout out about half the thickness of the worktop where it isn't resting on the carcasses. That'd save a bit of weight.
Also, I hope you sealed the bare edges of the sink cutout. I missed a couple of spots and the laminate has already started to peel away where the damp has got in. ☹️
