I think I just understood why they soak up the oils a bit with the bread at the end. Not only is it flavorful and cooks the bread a little, completing the meal, it also removes some or all of the leftover oils used to cook the meal so they can put more fresh oil and/or butter and not worry to much about flavours mixing to much between each recipe. I could be wrong. This is just a guess based on observation.

This question was raised while shoot of this video, the owner responded by saying, people still want more Butter!
Nice clean stall, great watching him cook, nice dishes but the amount of butter and oil used in each dish is a heart attack waiting to happen. Love the videos though.
you are right. most of indian street food are cookingh with lot os chesse.. because most of customers like to eat cheese. and i think the cheese may be not pure . still people are eating more cheese.. my worry is most of dished can made without cheese as well.
