A quick summary of gouge sweeps is the lower the number the flatter the cutting edge and the higher the number the tighter the radius of the cutting edge. Or in terms of material removed the lower the number (say #5) the cut will be wide and shallow compared to #9 which will make a narrow cut that is deeper.

For V Tools the higher the degrees of the angle eg 90 degrees the wider and shallower the cut vs 35 degrees which will make a narrow cut with a deep score.
