    Hi Sam, love the video. I'm a complete novice, not just at Johnny Cakes! Everything was going great, until the water! No advice as to how much, added some, too little, added more, too much! Tried to add some flour, just got into a mighty mess! Going to try again.... But don't underestimate my (and perhaps others) ignorance! :)

      Where are these updated measurements? I'm uk based and our cups are all different sizes so need exact measurements to create. Can they not be updated in the summary?

    Sooooo, I tried this twice. The second time, however, I was feeling for pastry so I added an over-ripe banana. Delicious!! Like banana fritters but more fun to eat because of the texture differences outside vs inside. Next I will be doing a batch with coconut and my life will be complete
    ... well, maybe after I drizzle the coconut one with pineapple compote. What more mi coulda want outta life???

    @Chef Samantha George for the baking is it better to use a flat pan like yours? Or is it also possible to fry the Johnny Cakes in a deeper pan? And the only thing you need to add in the pan is a lot of oil?

    Bwoy I Post Dumpling Stress Disorder! My problem is keeping the temperature of the oil stable. They’re fluffy but they ain’t no ‘browning’

      Hmmm what could that be? Do you use self rising flour or make the mix from scratch? Sugar should be in the mix which helps with browning...otherwise low and slow is good to not cook the outside of the dumplings too quickly leaving the centre raw. When the dunplings are taken out after frying they usually darken in colour and crisp up more. Try frying only 2 to 3 at a time

    Question, I am trying to make this recipe, are you using kosher salt? Cause that may change your ratio of salt to flour.

      Yes. Kosher is less salty than table salt so I'd increase it by half tsp per 1 cup of flour.

      You probably kneaded too much. It's supposed to be soft and light. Crispy on the outside and tender in the middle. What do you think?

    Everything is good, but the baking soda ratio needs less baking soda. I used a high quality baking soda, but it was overwhelming

    North America? No sweetie, we came from Africa with this knowledge. Have you been to Africa to see all the "johnny cake" and "Fried dumpling" and "brufoot", etc.? Lawdamercy, next you will say Ackee come from Australia, not West Africa...

      @@SamsFoodChronicles Tons of research opportunities in Africa real time. Don't use the European methods and let them scramble your brain with falsehoods. Don't read their books either because they come to Africa, learn the facts then return to their land and change everything they learned. You aren't the only youtuber being duped so don't think I am making stuff up. Come so you can learn it from those who descended from those who these recipes were taken from! I implore you, come!
