At 5:07. The thick slices are done that way on purpose. If you slice the meat too thin it crumbles. And you can't use a meat slicer. It has to be cut by hand as done at Katz's.

I remember eating at Katz when i visited new york 9 years ago I went at around 3pm so there was no line. Was really blown away by the meat because of the richness of the texture and it just melted in your mouth. It cost around 16 or 17 USD at that time. My cousin's jewish husband though who has lived in new york all his life said that there are several spots that are not well known that are better though. My only regret is not coming back to Katz again and trying the corned beef.
The corned beef looks like what you get in Ireland with cabbage and potatoes. My grandad called it heaven on a plate. I love dipping a cup in the cabbage juice and drinking it hot. Absolutely gorgeous. If you couldn't get corned beef in the UK you get a big smoked ham and boil it then boil the potatoes in the same pot and when the potatoes are done throw in the cabbage and let the cabbage infuse all the flavours and then get you cup and dip it in ,delicious. My grandad called it pigs ass and cabbage. He was from Cork and I still make it the same way as he did. I even buy the corned beef from the same place on Gloucester Road with galtee black pudding and white pudding. Absolutely gorgeous if you fry up some Richmond sausages smokey bacon and black pudding and white pudding between 2 pieces of soda bread. Slainte

The best pastrami sandwich in Manhattan I have ever had was 2nd Ave Deli on East 33rd street and 2nd Ave (corner deli). They steam the meat and its so soft and juicy - they do it to perfection.

Lived in Lower East Side for five years, just one block from Katz's. My first week there I ate their pastrami on rye 5 of the 7 days. As much as it's hyped, it really is one of the best sandwiches you'll ever have, and the only place I've had that matches the pastrami in terms of quality and taste is Langer's in LA. This was more than a decade ago, though, when the sandwich was $16 and not the current $28.95, which is kind of ridiculous.

There was a Katz's Deli in Austin TX for years. Went to it until it shuttered due to the son mismanaging it. Yet, it WILL RETURN to Austin TX next year in 2025!! Can't wait to go again!
