      I am thinking about a new type of restaurants : eating-spots,
      in eating-spots, food keeps changing, chefs also rotate.
      this is opposed to current restaurants,
      thanks to this rotation of food and chefs, eating-spots are way more powerful than restaurants.
      along with that, there is an app,
      people vote for the food that will be cooked in the next days,
      menu is influenced by the live input of the people via an app.

    Every culinary student should watch this film. It will either inspire or dissuade them but its a must see! Louis is an outstanding example of what it takes to achieve in this business - continued good luck to him and his wonderful supportive family !

    To open up my own restaurant has been my dream for the past decade almost, and this is truly an inspiration and motivation for me to make that a reality. This video proved that you can open up a quality restaurant with high standards without needing the frivolous bells and whistles normally associated with the finest dining experiences.
    Thank you Louie and the video producers for making such a great film to learn from! I hope I get the chance to dine at Nelson Street someday.

      Just make sure to count how many prospective customers are in reach of your site and will like your menu, before puttin your time and energy into the creation.

    I used to go to scholl around buckingham and the food was so shit in that area so glad its improved

    What a horrible community. Absolutely awful people to have as neighbors. No foresight, no compassion, and simply ignorant. Kudos to you for being able to ignore their pessimism and continue on. These community members are ultimately what will kill that area, ironically enough for them, opening new places like a eatery is what will save it.

    This I know, 4 years of 100 hour weeks running my place in Oz.. crazy hard, frustrating, exhilarating, and ultimately defeating.... But if you are a chef you have to try...

    The neighbours are absolutely terrible. Unbelievable. Instead of supporting a young guy who is trying to benefit the community by bringing in something new, fresh and vibrant, they are living in their little caves and moaning. Screw them.

    This was a great documentary! Im in the process of trying to open my own lounge in the downtown Chicago area and this was very inspirational!

    This is a really good story. I enjoyed it. You dream all of your life for something and then it finally happens. It happened like that for me in October of this year 2016. The Vermillion Café in Opelousas, Louisiana.

    Not 100% sure but just saw online and now its a pizza place... It's louis' pizza and cocktail bar. Don't know what happened but hey adapting to demand is business. Interior looks very different and wild now.

    Great documentary!!!! I will probably never make it to Buckingham in my lifetime, but if I ever did, this would be tops on my list!

    This is a very good presentation. We have a young chef with apparently above average abilities. He has a charming family, a charming girl friend, some loyal friends, and the second most important thing of all, ambition. Unfortunately the most important thing of all-cash, is in short supply. This video provides the viewer with an inside look at how everything meshes...and sometimes doesn't mesh, to get the food out and the customers back in. Good luck Louie!!

    Absolutely brilliant. I'm a 16 year old chef from the states and my goal is to own a restaurant of my own some day. The restaurant life is not easy, but the rewards are totally worth it all. Good luck!!

      How do you think that you know that the rewards are worth it if you've never done it. Wouldn't it be more truthful to key, "I imagine that the rewards are totally worth it all"?

      spurnthemuse I don't understand why you feel the need to intrude.. ? I'm rewarded everyday when I clock out from work with a satisfying feeling that I did a good job. That's one reward. I have yet to experience the rewards of owning a restaurant.

      Some folks have made the switch and found it to be satisfyin. Others have been disappointed or overwhelmed by ownin a restaurant in comparison to bein a worker in a restaurant.
      Sometimes they have worked in one restaurant for decades then bought it and became the owner, and were not happy with their ownership status. But others have been satisfied therewith.
      You entered my jurisdiction by makin a comment.
      Workin on the clock for somebody else and ownin a restaurant are not same experiences. The latter you must only imagine until havin the experience yourself.
      Why refuse to be truthful?

    Brilliant documentary. Loved every moment. What a great young and hardworking team. Ignore all the nay sayers, sadly the world is full of them and they are best not taken seriously. I began my business at 27, it was hard work, but the best days of my life. Enjoy.

    Yet, it's difficult to make a decent living in the U S. except in certain markets.

    As far as the neighbors,, we have a town across the river in New Jersey called Hoboken... it is ..To say in a way a total mess between restaurant and residential.... its IS THE GREATEST ATMOSPHERE ,,, ALIVE, EXCITING, RoMantic in all ways .. The town has kept rules and control to keep the residents happy and the business making money.... It really is Unique... if you come to the states,, come and take the ferry over and experience.

    Sorry to see they didn't last.......I have been doing exactly the same thing... 14 hours a day 360 days a year.. no holiday..no sick leave and burnt out myself physically and mentally...starting quite well but over the years losing the hang of it..in my humble opinion the staff thrive the business or can recede it immensely.. ...allocation is a major factor but believe me running a restaurant is a one-man show...on the contrary you cant be a chef, waiter, designer, manager, accountant, etc etc.......your gross profit is another important factor with minimum wastage and the right profitable prices.....in all honestly small businesses can only keep their head just above the water and that's a successful one like Louis and should you big like Jamie Oliver/Carluccio your empire can vanish overnight .....I really enjoyed watching this documentary which reminded me of my past and wish Louis all the success and wondering where his new venture is and hopefully not being badly affected by COVID 19..........another saddening news of the closure of "caprice" sister company of Ivy after 38 years of trading..

    I looked this place up on Google it seems like the resturant was converted into a casual pizza place wich is fine I'm not hating but I would have loved to see louie keep up his more fine dining ideas and ambitions maybe chase a few Michelin stars the guy clearly has talent.

      Amazing Grace: 63 years old here. Have worked along side millennials. MOST are good working kids. I think the problem is our politicians and their entitlement mindset. If we can hold the politicians feet to the fire, we will find a better America. The entitlement B.S. they invoke to get elected is destroying the best workers in the world.

    Well, planning approved his restaurant plans and the local homes would have been asked if they had objections? So its all done and dusted and letters would have been sent out because it is a historical community and homes are Grade 1/2 listed. It is not down to Louis to put up a message to his community about a restaurant opening in the building, planning Dept notify, good PR will promote the restaurant, that's how its done. Snobbery beyond compare. At one point they are crying out for a new proper restaurant e Voila! The kitchens would be approved by planning and not to upset the neighbours with smells it would have good ventilation and good equipment to deal with cooking heat and smells because of homes on either side. I wish him all the luck and respect being so young and passionate. Get off his back and support the local community. Would you prefer a spice restaurant like a curry house, Chinese, Mexican whose smells would be more prolific?
