I believe the Penicillin cocktail is an ode to autumn. Scotch, ginger, honey, smoke and comfort... can't get any better for the colder season. It is a delicious modern classic cocktail recipe created in 2005 and I'm sure we will still be making it in 200 years from now.

The Penicillin cocktail recipe
2 oz or 60 ml Johnnie Walker black label
0.75 oz or 22.5 ml of Honey & Ginger syrup*
0.75 oz or 22.5 ml of lemon juice
Float of 0.25 oz or 7.5 ml of Lagavulin 8 years
Garnish with candied ginger
*Honey & Ginger syrup
100gr finely chopped ginger without peel
1 cup Honey
1 cup water
Place all ingredients in a saucepan and bring to a boil. Reduce to a simmer, cover and let simmer for 5 minutes.
Remove from heat and let cool down to room temperature.
Then place in the fridge and let infuse for 12 to 24 hours.
Strain and bottle up.
Can keep in the fridge up to a month

The Penicillin is one of my favorite cocktails, I love how the honey, ginger and smokiness work together. It was also my first foray into peated whisky. Great video!!!

One of my favorite drinks! I love smoky cocktails and islay whisky. I like to garnish my Penicillin with a smoked lemon wheel to add even more smoky goodness on the nose! Cheers!
That sounds good! How do you make them?
@@TrufflesOnTheRocks Whenever I'm using my offset smoker for ribs or whatever, I'll place on the grill a bunch of lemon wheels and let them smoke until completely dehydrated (maybe 2-3 hours depending on the temp). They'll keep just like dehydrated citrus and they'll hold on to that amazing smoke flavor for a long time!

This is propably the most ballanced penicillin recipie i have ever tasted. 3:1 honey syrup ratio make this drink way to sweet for my taste, but this is just perfect. Thanks for it!!

I absolutely love the drink, and I've also tried a variation which uses drambuie instead of blended whisky + honey... it's pretty good, adds some tasty herbals to the mix without destroying the balance (after all, drambuie *is* Scotch whisky + honey + herbals)

I have made it a couple of times. But I now made it properly balanced. And then it is like a stingy lemonade with that peatiness and spiciness from the ginger.

My favorite fall cocktail that I drink year round!
Usually make mine with Laphroaig 10 (I love the intense smoke) but will try Lagavulin 8 based on your recommendation!
Laphroaig is a good choice indeed! I switch from time to time but I always go back to Lagavulin 8 for a mellower taste or 16 for a heavier taste. Cheers
Pro-tip: try an unpeated blend for the base for better contrast. I'd recommend Compass Box Artist Blend or Monkey Shoulder. The Famous Grouse also works in a pinch. Also, Laphroig is a good affordable (ish,) heavily peated scotch for the float.

Depending where you are, check your local Whole Foods or other grocer for The Ginger People ginger juice. In a pinch I've just used that to make a ginger simple syrup.

How long would you expect the honey/ginger syrup to last in the fridge?
Usually easily one month
If you want a faster ginger honey syrup, just toss all the ingredients into a blender, then let it steep for 20 minutes and then strain into a bottle. Super fast and easy.
That’s just me but I never been a fan of ginger syrup made with ginger juice. I know many people do it like that though. So I agree, this is a faster way to make it if you like the flavour profile
This has been on my list for a long time, I just don’t have any single malt Islay Scotch, and that stuff can get expensive!
It’s true. Where do you live? Laphroaig sélect is not too expansive and is quite peated. Plus it’s good enough to sip on its own.
Truffles On The Rocks hahah I’m in Alberta, but I looked up Laphroaig Select and it’s not bad, still more than I would spend on a single spirit usually, but definitely not ridiculously expensive.
Haha maybe I’ll try and brave the liquor store one of these days. You have the choose the right one cause the prices can vary quite a bit.

It always puzzle me that Lagavulin 8 is always like twice as expensive as Lagavulin 16, regardless is aged for half the time. Is that the case in Canada as well?
What no! It’s 100$ while the 16 is 160$ I believe
@@TrufflesOnTheRocks Well in France and Spain where I have seen it, usually Lagavulin 16 is around 5à euros in France and around 80 euros in Spain, and Lagavulin 8 is from around 100 euros, as far as I remember. It is definitely harder to find as well, so I am not sure if that influence the price or not.

For an agave take on this, swap out the blended scotch and peated scotch for an aged tequila and a little mezcal, respectively. It's called a Medicina Latina.
