    I love the education. With a larger fish you can get lots of unique cuts I grew up throwing away. I take all I can now days and enjoy using the entire fish.

    I don't normally comment on videos but I have to here. I've watched a few of you videos and you do a great service to the fishing community. Even though I've never stuck my toe into a salt water anything I feel I could cut up a salt water fish with your help. So easy to follow and listen to. You actually enjoy doing what you do and that makes it enjoyable to watch I live in west central Wisconsin and would love a chance to try some of your fish. Do you deliver??     I just returned from my local Asian store, and one of the things I bought was a whole (frozen) _'genuine American red snapper'._ (it looks 100% identical to your fish here, so that's why I'm calling it that.)
    I've purchased them from this store in the past, baking them whole in parchment paper with baby bok choy and seasonings, but I've never tried to fillet one out and use it for sashimi.
    _This is why I bought a small one this time around. (1.5 pound for $8.95 per pound.)_

    I worked in the Alaska commercial fishing grounds for 10 years from Dutch to Ketchikan AK. Life is hell in the Bush but it’s amazing having 50 yard seats and being on that fishing field!!! TV does no justice to the good bad and ugly of a life of a fishin life!!!

    I dream of eating genuine red snapper again. When I was a little kid, my father would make it into ceviche & it was heaven to eat. I miss those days & it has been many many years ago. I will do my best to try & find it out in California again, but that is almost close to impossible.

    Dang, I wish I had access to some of the fish I see getting butchered up on this channel, and I love seeing the skillful and efficient performance Reed puts on. Up here in Minnesota, my favorite local fish is walleye, and there are only a few other species to enjoy. Also, few options at the grocery store, and those are by no means fresh.

    Reed, you really are a master teacher of fish cutting. You really should co sider doing g a course or at least take in an apprentice or 3. LoL Your teacher also needs a thumbs up as well. If ever I make it there for some surf fishing I'll be sure to try and look you up...

    My dad taught us not to throw away any of the fish and use the whole thing. The head is usually done as a soup with chunks of fish meat, vegetables, and spices. Reed is correct about the meat between the bones, throw that on the grill, salt and pepper. Best fish tacos ever comes from between those bones.

    I don't know why your videos popped into my feeds, I watch them and you do a good job cleaning fish. I worked with a lot of mates who said they can cut fish, most are butchers. I had to look up where you are located and had to laugh, I live on military and woolbright. i run a 68 viking out of lake worth

    A lot of people only know Red snapper. I personally have a few other snappers that I prefer, as in school masters, mangrove, silk and yellowtail.

    In my opinion at least red snapper season should be open for longer in the gulf they’re insanely abundant you can’t even get to the bottom at a lot of spots before the ars get to ya there population is booming

    Up here in Michigan we do the same thing with our Walleyes. We call the cheeks Freshwater Scallops and of course the wings are loaded with meat that a lot of people just throw away. Never understood that. 🤔

    Tell me about the saltwater bath. How much salt to a gallon of water. I drive long distances to fish and always thought that freshwater messed up the flavor of the saltwater fish, just drove 14 hours from Louisiana to NC with my catch this past weekend with red snapper, amber jack, almaco jack and yellowfin and blackfin tuna. I had the tuna filleted there and they wasted too much meat, brought my other fish back and did that myself.

    No, normally if they are at the fish market they are from South America and more commonly from SE Asia.

      Unless you are directly on the Gulf of Mexico you won't get any American Red Snapper.
