So nice to find a vegetarian pantry challenge video. Some of the other pantry challenge channels seem to rely heavily on a freezer full of meats, and vegetarian requires a bit more imagination it seems. Really enjoyed this!
Thanks! I sometimes have chicken in the freezer for the two kids that eat it but that’s about it for real meat. Our freezers have a lot more stuff that we go through quickly like fruits and veggies and breads, so they got really empty over the past two months!
I just found your channel with this video popping into my feed. Your meals all look delicious, and it's great to see people making the most of inexpensive, healthy staples like beans and hummus. I'm going through March, and probably through August, on the pantry challenge. I've allowed myself $20/week for fresh produce/dairy, plus $25/mo for any amazing sales on staples I use on the regular. I need to clear through my side/side before I start on the deep freezer meats.
This was my first time following along with the challenge. I'm super interested in hearing the after-analysis, so thanks for detailing your thoughts and experience. My personal goal is to take what I observed this year and do a better job stocking/rotating/using, so that I don't want to participate next year 😅.
