I advise putting pieces of cork cut to 1 cm on the corners in between the pastry and the dish you put over it to bake. The flaking with be able to develop and grow to max 1 cm height instead of being squished down.

Where i worked, we did the pastry the same, but used vanilla intant pudding and cream mixed for filling topped with thin icing, easy and Aussie ❤
