  • Potato Leek Soup is a food as medicine soup.
    People when they are sick with colds, flus or some other respiratory challenges are given chicken soup. First it takes 14 hours for animal foods to pass through our bodies, whereas, it takes only 90 minutes for plant foods. When we are not feeling well, we need foods that digestive quickly like vegetable soups and broths. We do not need our digestive system overworking to process animals, when we need our immune functioning optimally, which 70-80% is made in the gut lining.
    Medicinal Benefits:
    Potatoes - have protein that is very easy to assimilate. They are also rich in minerals like potassium and amino acid - L-lysine which helps reduce inflammation. Potatoes are good against ulcers and burning stomach. They are one of the most healing foods for our intestinal tracts - dealing with chronic diarrhea to bloating to gas, constipation to acid reflux. They are gently on the nerves inside the intestinal lining. Potatoes move through intestinal tract and pathogens cling and pass out of the body. They drive pinworms out. Potatoes feed NO pathogens and instead potatoes slow down pathogens and weaken them so your immune system can get stronger.
    In the past, the reason that potatoes have been given a bad wrap is because of the way we have eaten them.
    The best medicinal way to eat potatoes is STEAMED. Usually they have been eaten with fats like bacon bits, fried oil, butter, cream and sour cream. So for medicinal purposes - no roasted or baked or fried potatoes without oil, butter, sour cream or seasonings - no dairy products.
    Wash the potatoes and keep the skins on as the skin of steamed potatoes are packed with ANTIVIRAL compounds and nutrients.
    What makes steamed potatoes so healing is that they don not feed viruses or unproductive bacteria, yeasts or mold, whereas eggs feed every single bug we do not want in our intestinal tracks.
    DO NOT EAT potatoes when the skin of the potatoes are green or they have started sprouting.
    Garlic- is antiviral, antibacterial and fights against unproductive bacteria, bad pathogens. Garlic is great to protect against colds, flus, strep throat, pneumonia and viral related cancers. Garlic is an immune booster.
    Onions - All onions, leeks, onions of every color, shallots and scallions are nature's antibiotic and are highly medicinal casting out viruses and bacterial overgrowth in the body. They also protect the lungs, so good for colds and flus, deal with heavy metals in our bodies, joint pain as issues like SIBO.
    POTATO LEEK SOUP
    6 good sized potatoes
    2 leeks
    1 teaspoon thyme
    1/2 teaspoon coriander
    2 -3 garlic cloves, minced
    Miso to taste and never boil
    Broth made from Kombu - 6-8 cups
    Olive oil or toasted sesame oil - to sauté leeks and spices or just water.
    Garnish with a bit of raw green like Italian Parsley, sprouts or cilantro.
    Preparation:
    Broth - bring a pot of water to a boil and add a five inch piece of KOMBU sea vegetable. Boil for 10 minutes and this is your broth. Kombu is full of minerals and takes radiation out of the body. Set aside.
    Water sauté or oil sauté the leeks with seasonings in a soup pot, while you are steaming the potatoes in a steamer.
    Add the broth and the steamed potatoes to the soup pot and heat together for a few minutes.
    You can mash the soup with potato masher or blend it or blend just a portion or as is - depending on how you like your soups. Miso to taste and garnish .
