Binondo is a good mix of chaos and order. Once you leave Binondo, it feels more chaotic and dangerous in the surrounding neighborhoods. Best parts of Manila are BGC and Makati CBD (not the Poblacion redlight district but the actual CBD area around Ayala). You’ll feel completely safe and it’s so easy to walk everywhere
Since you are in the old manila area, you may want to go to intramuros, arroceros forest park, luneta park, the bay area, the dolomite beach, and watch the magical manila bay sunset.

Mabuhay Zane! Definitely recommend staying and hanging around BGC which is the new downtown area for Metro Manila. Makati CBD is also really nice, as is Ortigas (they're the 3 main downtown areas) - the area around MOA is a large new area in the Bay - you can see the world's largest Ikea, and the worlds second largest dancing fountain at Okada. They do free shows between 6-10pm every day. If you're able to go to Baguio and the Cordillera highlands and see the 2500 year old rice terraces on the UNESCO world heritage list (its 3-4 hour trip via bus on the expressway to Baguio, but a longer trip to see the rice terraces once you're in the pine-filled highlands) - or Batanes (the NZ of Southeast Asia), its highly highly recommended :)
