Recipe I Used:
12 oz of Meadowfoam Honey
3/8 Gallon of Water
2 Grams of Lalvin QA23
What I wish I had used:
48 oz of Meadfoam Honey (3 Pounds)
Water up to 1 Gallon
2 Grams of Lalvin QA23

Google said it would taste like marshmallows and I thought it was a joke, but bought it anyway, and it actually tastes like marshmallows. It's amazing, can't wait to try this mead.
2019 Los Angeles County fair winner swept the home brew competition with a “key lime pie mead.” He used meadow foam honey to mimic the flaky crust flavor of the pie.
It tastes even better when you water it down in the must. I could drink that unfermented and be totaly happy lol
I'm about a week into a Medofoam sack mead I started at a 1.090 today it was 1.034 and I added a pound of honey raising the gravity to 1.066 so I still need to add another pound of honey to get to 18%
I use 1116 i had that same floral its is soooo yummy it was good with the carbonation also. Its going to take most of my 6lb jug to make this but its going to be something special for special acasions.
I think Medofoam is a very hard flavor to nail down with words. Its in a way its own very unique flavor
I think I need to get some of this to make my cotton candy mead. Would go together well.

I'm gonna try one of these myself soon, I've got about 4.5 lbs of straight meadowfoam, and 3 lbs of meadowfoam/raspberry. Not sure yet if I want to throw them together for one bigger batch, or make a couple smaller batches with each separately. They both taste amazing as is, really looking forward to trying them as a mead.
Luckily I live half an hour away from where they grow meadowfoam, so I got first dibs 😎

2:16 Something feels off about the amount of honey in the scaled recipes. Assuming 16 oz = 1 lb, then 6 lbs and 9 lbs should be 96 oz and 144 oz, respectively.
Never heard of Meadowfoam honey. Have to check it out. Think it'll be something my GF would like.

I think the ounces in the alternate recipes are incorrect. I *believe* it should be 96oz for the 2 gallon and 144oz for the 3 gallon. Thanks!

When adding Brewers best flavoring, do you add to taste, or will the taste get more pronounced with time?
I normally do to taste. I feel like each one is so different, it’s hard to go by the recommended amounts!

Never heard of meadowfoam honey, sounds interesting.
I saw in some of your videos that you stabilize your mead and then backsweeten it. How long can one wait before backsweetening it? I usually rack, stabilize and the following day I stir some more honey in the brew. Is there some kind of expiration date at which the sorbate will be degraded and won't prevent further fermentation if adding raw honey containing living yeasts?

The sorbate should halt any future fermentation for good! So you could wait as long as you want before you backsweeten!

Three questions if you can answer and especially why if possible<
1. You don't bother doing must sterilisation of raw honey?
2. You did not use GoFirm or yeast nutrient, I thought traditional meads required nutrient?
3. Does using too much yeast effect flavour of a natural mead?

1.) No need to! The wine yeast is stronger and will beat out the wild yeast.
2,) I normally do add some yeast nutrient of some type. I didn’t this time I can’t quite explain why!
3.) you can’t really over pitch yeast! It’s just expensive if you do too little yeast is definitely a problem.
Haven't seen any mead videos using figs. We always have excess figs during season, What are your thoughts on using figs? Noticed you keep your carboys out in the open. Is it really that important to keep them in the dark? Just made a 3 gallon batch of traditional mead. Wanting to divide it into 2 batches when it is finished. How much Cocoa nibs for 1 1/2 gal. batch. Making the chocolate/cherry mead. Thanks so much.
I haven't used any figs in a mead yet. I think it could be cool! The mead room stays dark most of the time, I haven't had any problem with anything going bad because of it being in the light yet!
Is there any "creamy" taste quality to it? I'm interested in using it to enhance the vanilla side of an orange cream recipe
Maybe slightly, but it’s more bright sugary than that!
I got 6 lbs of meadow foam from a local aviary for 48$ not sure what to do with it, any ideas. I’m very new to mead.

I just purchased 3kg of Buckwheat honey before doing research. Was wondering what I should combine it with to bring out the qualities of buckwheat honey without it tasting like I strained it through my sock at the end of the day. (I’m really new to brewing)
I’ve made a buckwheat traditional before, I’ve also used buckwheat with cinnamon and coconut and it was very good! Other than that I think some dark fruit options like berries could be good!

@@ManMadeMead if I can ask one more question, my brewer supply store sold me these stoppers that vent out instead of an airlock. The problem is that all resources that I see say you judge completeness by the airlock. How can I tell when mi cider is ready to be racked without the airlock?
Might have to try this one. Would you still choose qa23 if using the increased honey recipes you displayed or would you change it to say d47 or something else for abv, esters, etc etc
I definitely would still use QA23 for a bigger mead. D47 isn’t bad but I prefer QA23 of the two

I made some strawberry, I don't think I used enough strawberries, how do I flavor it more without watering it down And loosing the alcohol ? It's kinda bland tasting. Smells like strawberry but doesn't taste or look like it. Ever use Kool-aid packets to flavor something ? Lol . Would that work ?
You could always add more strawberry to it! It won’t water it down. Koolaid won’t work haha
Do you think 2.5lbs of meadow foam, then maybe 6-8oz of clover honey to back sweeten after fermentation would make it taste odd? I love sweet meads, but don't want to ruin flavor.

Brooooo at least calculate a LITTLE residual sweetness from primary. The 3 pound recipe you use with a lot of your yeasts are making it bone dry lol
True! You can definitely do like 2.5 pounds for the primary and then backsweeten with the .5 pounds!

@@JJ_Adventures There was no residual sweetness from the primary. It is intended to go dry. In order to have leave some residual sweetness you will need to cap out the yeast, I would have had to use somewhere in the realm of 3.5 pounds of honey to cap out the yeasts and leave residual sweetness. There is no calculating for residual sweetness other than assuming you let it go dry and then back sweeten after stabilizing! This is a rare honey type and I don't believe people are going to be making meads with over 3 pounds of honey because it's so expensive! I'd rather tell people to go lighter and back sweeten than make huge meads that cost 60 bucks for 3.5 pounds of honey!
