@@Mr.PepeSilvia Sous vide is cheap compared to most of the kitchen equipment, and is better than a lot of it too. A good Sous Vide setup is maybe $100. How much is a decent oven? What about other stuff? Fat separator isn't entirely needed on its own, just let the fat cool down in the fridge, and then remove it from the top.

I spent a summer studying abroad in Mexico and on the VERY LAST DAY I discovered a wonderful torta shop that had not only the best tortas I ever had in my life but also the best fresh squeezed orange juice I ever had. Literally a half a block down the road from my host's home, the other way from where I normally went.
My life is pain, having known that wonder for only one day in my life.
Love that Guga is still going after food with some heat.

I tried my first sous vide steak today. As Guga always say, it is a great way to cook steak. The thing is, I’ve been watching so many videos that at the time I was going to torch it, it came to my mind: “I know it does not look good right now, but watch this” and the music also started inside of my head hahahaha. Great videos man, I wish you all a very happy new year :)
It's interesting to see people calling the ingredients to this sandwich "specialty" or "rare." Maybe it's because I'm in the south, but everything mentioned can be found at my local Kroger's.
Same here in New England - I have access to all those ingredients. The peppers and the cheese are already in my kitchen, and it is easy to gather up everything else.
Can't find any of them where I am. Not even the short ribs cut like that.
Guga, if you are using Oaxaca cheese (quesillo) you don't need a blender or a food processor, you can simply use your hands and "untie" the cheese.
Angel saying that the one without cilantro is better... man, Guga should dry age him.
Edit: Okay, I forgot that half the population tastes cilantro as soap, but Angel is no excuse, he literally removes anything that has a little of green.
Angel doesn't know it, but guga already is. That's the only reason why angel looks older compared to videos from 3+ years ago

Half the population has an aversion to cilantro. It's affected by genetics, and to people who are born with the aversion to it find that it tastes like soap. I, unfortunately, am in the soap category.

Too many people think that we all taste and smell everything the same way, but there's simply no way to tell what others taste or smell. Plus our senses are also conditioned by what we grew up eating so what might be awesome for you might be ok at best for someone else

Heyy Guga, love your videos. I made a recipe for a cilantro-lime mayo that I think would go amazing in that type of sandwich, I use it for my burgers as the bottom bun sauce, I use another sauce on the top, provides a broader experience on the burger:
- One egg
- 1 cup neutral tasting oil
- aprox. 30 grams of cilantro
- Zest and juice of 1 lime
- 1 to 2 cloves of confit garlic
- A tiiiny amount of truffle oil
- Salt and pepper to taste, I suggest a good amount of pepper
- Blend on whatever, slowly pouring the oil
Pasteurize your egg sous vide 👍

My friend, them Torta combinations are endless.
Mexican Tortas ahogado and pambazo, and a yoyo from Venezuela. The yo-yos use steak meat but make the bread out of straight maduros, sweet plantain.
Idea: sous vide stingray wing, one control, one with tamarind wet rub, one with tamarind dry rub.

Another way to remove the grease is to chill the marinade in the fridge for awhile and let the fat harden. It can be easily removed that way,

To be frank I'd remove the cilantro too since I have that generic trait where it tastes like soap. But I'd replace it with lettuce or sauerkraut... 😁

Birria-style meat (from whatever animal) makes everything better. I keep a stock of Guajillo, Ancho, Arbol, Pasadena, and New Mexico chilies on hand specifically for making birria, and I have vacuum-sealed bags of it in my freezer.

Just use a cast iron pan instead of flamethrower, freeze the fat in the fridge, and a Sous vide is something nearly every kitchen should have, because of how useful it is.

You always use garlic powder to season your steak, but I was wondering if it would not be better to use other garlic seasoning like fresh garlic, garlic paste or some kind of garlic compound better ?
Would you make a video about testing different kind of garlic seasoning to find out the best way ?

In general, it's about how the garlic cooks. Fresh garlic burns too easily. Not something you want when most of your food is being cooked high temp, even for a short time.
Paste incorporates into food better but also has low heat tolerance. This is also more of an extract, simular to tomato paste. Just concentrated flavor.
Powder doesn't have as much taste, hence why it looks like he adds a ton to his proteins. However, it can withstand higher temps
Tldr: it depends on what your making and how it's being made. Hope this helps

@@onepunchtocelebrate670 Not really. The reason why you don't use fresh garlic when cooking sous vide is because it requires 185°F. to break down. Same with all allium like onion, shallot, etc.

I made the chicken mole yesterday and the mole sauce was pretty rough, my wife didn’t like it either; but the sous vide chicken was thee best chicken I’ve ever made. I’m saying I’m trusting the meat, but not the sauce and not his taste testers.
