1. great vid, as a avid 12 lover i feel u represented every aspect of the game great
2. there are enouth restrictions to make the run challenging and a lot of em can be very engaging and fun to do even multiple times while trying different approaches
3. if the vanilla game is not challenging enouth, we have 2 amazing randomizers for the game that can be found on nexus mods, that can change the view of certain things or even modefy stats etc in a way that the game becomes absolutely unfair and low key unbeatable (example, boss that got boosted to 500k HP starting to throw balance motes after reaching Crit HP, whos damage cant be lowered or negated for 300k+ dmg AoE, that could still be defeated by abusing ranged weapons in order to position the party in a way that never more then 1 person is hit by it at a time)

Ok so, this is the game I've played the most of even (across the three versions) so I know a little bit about it...
First off, it's not entirely true that ALL content is the same across platforms for TZA -- specifically, the PS4 and PC version of "New Game+" differs from Switch and XBox in that the later makes you bring in all your stuff from the previous run like a 'proper' NG+ whereas the former you 'merely' start at level 90, making it more properly 'stong mode' (which is what it's called in Japanese, NG- is of course 'weak mode'). The other difference is that on PC only you can start NG+ and NG- from the beginning whenever you want -- other platforms you need to beat the game and trial mode respectively. PC also has boosters to get max Gil and max LP the others don't have.
Also you got a point wrong -- you can't use four characters at once, outside of when a guest is with you. As for a solo challenge the large majority of the game when you consider side stuff is available for anyone solo so it's not a big deal to choose who you want there.
I find it odd you find it not replayable from a challenge runner perspective given it looks like you used a mod which......not only is very strange as seemingly the first challenge run (which seems to be two characters attack only with you controlling the passive healer?) but that you use that as a basis for determining if it's replayable. I've done a myriad of challenge type runs for this game, just because one might be easier or harder doesn't diminish other types of runs.

I play a game for about a month and then shelve it the rest of the year so I actually have to relearn some mechanics. This is how I normally combat the, "Been there, done that" dilemma. Yeah, you get back into riding the bike quickly but you actually have to relearn or remember some things.
That said, I "think" it's almost time for a ZA run but I have to recheck my save file to be sure. I don't like checking too often because it might cause me to want to play it sooner, taking away from the semi artificial freshness lol

ff12 hard mode is unlocked by beating the trial, you start lvl1 and stay lvl1 and it's quite difficult
