Of course, the original is to be given to the customer/client. The copy - keeping this is optional. You can keep all the copies in an envelope, maybe or just leave them in the receipt book like the one on the video. Its just for in the event if you have to prove anything. After some time, they can be discarded.

Actually your landlord is suppose to be giving you a receipt as he/she is receiving money. But in your situation maybe he can sign it (which is a good idea) then you give him the original and you keep the copy.
It would make sense if you keep the white copy since you are the customer/tenant (even if you're the one who fills this out). He keeps the yellow copy if he wants to but he has to sign it.

Yes. But make sure he signs it - acknowledging that the money was received.

If the receipt is being prepared for a rent payment, you can put the 1st of the month and last day of the month for example
