A smaller knife, like the one you used, seems ideal for smaller game, the type process. The knife is beautiful, no doubt, but out of my price range. Loved the way you respectfully prepared that squirrel. I have a or if them where I live, and they eat up everything in the garden. My go to skinning knife is a Buck lite max, for many reasons. The main reason, it has never failed for me. Good video and squirrel stew sounds good right now. Thanks.
Another great and educational video, James.....I like all your vids but my favorites are wild game and food prep on a campfire....I knew that was going to be one spicy squirrel when the second jalopeno went in....Knives are a subject dear to my heart and I always value another man's/woman's choice of blades. For my own personal use I find a Mora Companion MD makes a great food prep and EDC knife....I always wear one as a neck knife because they are so light and handy...I have skinned out and field dressed five feral hogs with the same $15 knife. I never beat on any knife with a log.....and they will last forever....Like you, I am knife poor and never handicap myself with just one knife. I also EDC a Buck 110 folder on my belt...and a Swiss Army one hand Trekker with plain blade in my pocket....and usually a Case yellow handle Trapper or three blade knife in another pocket......For heavy work I favor a Becker BK 7 and a USMC Kabar.....I also mod Old Hickory seven inch butchers into a more usable butcher knife and even a perfect Kephart knife..... thin blades slice better for me...... Always interested in your choice of gear and how to use it.....Keep up the good work........

I have wanted this knife very much and would have to agree with you and pretty much everyone else in saying that it is definitely a little high priced for me. Not that it's not worth it but just more than I would spend for a semi custom secondary knife. That being said I still want one and if they ever come down in price I'm placing the order. I left out a favorite go to knife in yesterday's comment and it deserves a very honorable mention. It is a high quality knife called a " Hogs Tooth " built by William Collins in East Texas. He too has a RUclips channel under his name and also W.C. Knives. He does vids of his field trials of his knives and other outdoor gear on his fishing/hunting/camping and camp cooking trips , as well as his in-shop tutorals . I cannot recommend his knives and his videos highly enough...........ATB and I hope you and Kathleen and Cuervo Negro had a very Merry Christmas.
I would love to have this knife but that price point kills me. Yes I already know you get what you pay for.....here is my problem with that. You can get a next gen cpm3v for about 150 or a Lt wright patriot with stag scales for about 115. Both knives use close to the same amount of steel if not more with the next gen. I know because I have both. I can get the gns for 200 made from cpm3v as well. If they were to drop the jx3 to about 130 it would already be in my hands. I can tell just by looking at it how amazing it would perform.

My squirrel skinning knife is my 2.75" folding knife. It's Winchester branded, but basically an old back-locking Buck knife. Takes an edge well and holds it a while. I've been considering getting one of those Outdoor Edge knives with the changeable razor blades, just because I'm curious to see how it works.
James I fucking love you dude. I've said it before, but good on you for actually processing game in video. Talk is cheap, but what you do is the real deal.
This past elk season I skinned 2 elk with the Havilion Piranha knife. The replaceable blades are great for working on game when your miles in the backcountry.
I'm curious how you'd compare the Jessmuk, Jx3, Jx4, Jx6? I've seen and enjoyed all the videos and all perform the tasks just fine it seems. I know the specs of the knives and have seen Chris Tanner talk about each, but they're not often talked about in relation to one another.
hm wll the jessmuk is the all around best belt knife, can do all tasks and is the strongest. the jx6 is the finest of the 3 making it the most precise slicer, excellent for skinning. the jx3 falls behind as the less specialized blade.
Works well for skinning but too short for vegetable processing. I have an old hickory boning knife for deer, fish, meat and vegetable processing. Saw a butcher use the boning knife on Kentucky Afield video.
Nice review bro! I dont know that I have a dedicated skinning knife. It seems like everytime theres a deer on the ground lately, Ive butchered them with a Mora 2.0. Its a bit small, but I tend to like a small knife for that type of work. Wish it had more belly though..
I have been wanting to start hunting, but I'm still researching my local laws before i get into trouble lol. Once i start hunting I think I would use my Cold Steel Master Hunter in 3V.

Honestly I think the price fits the knife, especially if you going to be using it regularly. Might be small but when you think of the quality and care and materials of the knife its worth it.

One of the very very few reviews that I've seen for the JX3. Great job showing it's capabilities. I heavily agree with you when it comes to utilizing some ingenuity if you have to use a tool for a task it wasn't necessarily intended for, just got to use the ole noodle.
Price is too high. Would be a great edc for my neck of the woods as knives aren't exactly accepted here but this would pass with flying colors. Just drop it about $40 and I'm in.

Hi, guy.i I love your channel. Keep in mind that in California, no rigid blade knife, can ever be concealed. You can go to jail, for having a boot knife. All folding knives CAN be concealed. They can have a blade that's a mile long. It doesn't matter. If it's a folding knife in California, it can be concealed. An exception to that, is that no knife in the County of Los Angeles, can have a blade over 3 inches long. If you have a fishing pole in your car, and you tell the police officer where you just went fishing, then you can have a knife, over 3 inches.

Looks tasty. Last time I skinned something I probably used a kitchen knife. That one looks like it would help out alot.

i have a playslist for game processing and another for plants and fruits so if youre in a similar environment, tha can help;
