Great mod ideas! I seen these before but I had the same concerns as you so I was a little turned off about getting one . I think your modifications make it more useful and desirable for a majority of people. I like and use wide brim hats but I tend not to use them when its raining so a hood would be awesome , also the front button idea is great, that way its more secure in rain and wind and you don't have to worry sbout it. Looking at that watchcoat reminds me of the medieval robes which did have hoods. What is with the bell sleeves though? Seems t me they would get in the way or let water in. Then there are the bugs if you sleep in it. I would do the button modification on the sleeves of your on the ground or needed to do something. I would also do something similar along near the bottom hem. I didn't notice any pockets on the coat. A hidden pocket on the inside would be nice for your coin pouch or gold poke.

For hunting you want your head free to see hear...a hood tends to close you in near too or shut out the outside. Trapping doesn't have the same urgency to see it shoot it. Might be why.
I'm glad to see that someone else realized the shortcomings of Dave Canterbury's Watchcoat. What's the point of having a waterproof coat that doesn't close up at the neck or have a hood? Nice job.

Tentsmiths would be smart to market a hooded version of their watch coat even if it deviates from historical perspective.

Looks like you could use a button on the end of each sleeve also in case you didn't want then hanging so low
