After looking at numerous hibachi recipes, loved the no nonsense easy instructions on this so decided to give it a try to celebrate my granddaughters birthday. It could not have turned out better, everyone was raving about it and I had a great time cooking it. For my meats I cooked chicken and steak and used the hibachi glaze. I got a little heavy handed with the sesame oil so my only recommendation for newbies like me, go easy on it and add more if necessary. Great job, great video, and love the dad jokes as a bonus...LOL.

Hoisin sauce and lobster sauce are other options. I like a little green onion and green peas as garni in the rice. I might dice up a shrimp or two and some chicken for the rice as well - extra flavor. Nice job! Love my blackstone griddle - have a GMG smoker and a weber gas grill. Most cooking is done outside, unless it's really storming, and even then we might have something on the smoker grill.

Nice! Make sure you cook the rice the day before and leave it in the fridge so it can dry out a little. Fresh rice gets mushy when you try to make fried rice.
The rice doesn’t need to be spread on a sheet pan true, but it must be day old dried out rice or else it will clump too much or be too sticky. Too much moisture left in the rice will cause steaming, that’s the reasoning for day old rice.

I was only explaining why it is so commonly recommended for the rice to be laid out on a pan and to be day old--too much moisture in rice means steam effect, which inhibits frying and causes sogginess and mush. Since your rice was dry enough, it's perfectly fine.

I think that is a good thing. You can always move it to another area of the griddle if you need to. Chicken is often loaded with chicken broth by the packing companies so the liquid coming out is likely that.

If you can find it, try toasted sesame oil. It's much more mellow.

The spatulas only need to reach 150 degrees. After flipping fried food there is nothing uncooked.

Nice video! One suggestion, do the sesame oil a couple minutes before it's done cooking. It burns quick and loses flavor if put on too early.

Use Jasmine rice and you can cook it right before you put it on the griddle. No need to let it sit for hours.
I do use Jasmine and in my tests it still needs to sit.
