This is almost like a Hainanese Chicken Rice, but so many things went wrong in the process here.
You need to wash the rice to remove excess starch so that the rice is fluffy and not gooey. Gooey rice like that does not taste good.
Add ginger, garlic, and sesame oil when cooking the rice.
You have way too much water and ended up making porridge instead of rice.
If you aren't using whole chicken, you would likely want a chicken thigh instead of chicken breast for this dish, they're fattier and lends better to the dish.
Also, for the sauce, make one from ginger, garlic, scallion, soy sauce, sesame oil, and optionally chilli.
Traditionally, Hainanese chicken rice were made by boiling the chicken and the rice separately, but this isn't really necessary. There are versions where it's made in one pot like this.

Oh my! Darlin, that is not chicken broth! What you had there was skinless, boneless chicken boiling away in plain water! If you want a fabulous tasting chicken broth that packs flavor, then take you some leg quarters or a whole chicken that you've separated at the joints, then place them into a pot filled with some water just a 1/4 inch from the top of a deep pot and boil for about 1 to 1.5 hrs. on medium low heat, checking the water level occasionally making sure it hasn't all boiled away or that the broth level hasn't droped too low adding more water if needed to finish the 1.5 hour cooking time. Besides, you'll want to have enough broth if you are planning to add the rice. I usually wait until my chicken is finished boiling, then place a colander over a large bowl and then use a large spoon that has drain holes to lift the chicken out of the pot. Once all chicken has been removed, I then pour the rich golden color broth into a two cup pyrex measuring cup, placing it aside to cool, then once cooled, placing broth into a Quart size freezer bag that I've dated and labled its contents for later use in other dishes. They freeze well too, just lay flat, so when you make more broth at a later date, you'll be able to stack another on top of that frozen one. They make for easier storage that way. Comes in so handy for preparation for other meals, having such a simple but so flavorful broth that is homemade. I also measure two cups of what is left of the broth then place back into the same pot I boiled the chicken in, then add 1 cup white rice then steam covered for 15 minutes or 40 minutes for brown rice, also covered. You are left with such flavorful rice, and it makes such a great side dish to the chicken. Oh, that frozen broth can be used in so many other dishes to flavor them as well! Also forgot to mention that as the chicken first starts to boil, please skim away that yucky foam and discard. It is not plesant in the finished product. That was the gross stuff you precious son was speaking of. Also if you wanted to make a chicken stock you can add in a whole onion that has been quarted, carrots that has been cut into thick round about a quarter inch in size, some celery that is cut into about two inches in length and a bayleaf adding those ingredients to the water at the beginning also makes a fabulous flavorful stock as it cooks together with the chicken. Once it has finished cooking discard the aromatics which is that celery, onions, carrots, and bay leaf. This can also be stored in the freezer or canned if you know anything about canning. I always boil my chicken with plain water no salt added at all to the water especially when I boil chicken for my senior chihuahua. Also for her I also absolutely never use any onion it is highly toxic to pets. She has very few teeth. I Also don't give her any celery. Once the unseasoned boiled chicken, brown rice and veggies have cooled I mince the chicken and serve with a tablespoon each of the cooked mixed veggies which consist of green beans, peas, carrots and brown rice that was boiled in that same plain unseasoned chicken broth. Even for the family I always find it a good rule of thumb to not add any salt to the water or poultry especially if you will be storing in the freezer to be pulled out for later use in a dish that you will be using salt in. Great rule for one who has blood pressure issues too. Happy cooking!

Everyone saying she should put the season packet in before the rice, she completely forgot she even had it in the cupboard. New habits are difficult to stick.

Momma, you’re supposed to wash the chicken thoroughly and if you want chicken broth you use the chicken with bone in. You remove the chicken and season it. The rice…momma you WASH the rice first and then you cook it in the broth.

The actual way to do it is melt butter with garlic and chive. Add rice toss to brown it a bit than add can chicken broth with water or water with chicken cubes/powder lol

Do you actually think that? Chicken broth is made from boiling a chicken carcass so the goodness comes out of the bones and some vegetables. She just boiled the hell out of those breasts and whacked some rice into it, boiled it up some more until the rice became mushy. I suppose she did season with the onion soup packet. Plenty of salt in there!

I think mamas next recipe should be 2 boxes of Kraft Mac & cheese. HAS to be Kraft! Don’t play around mama! And 1 lb of hamburger scrambled up. Drain the fat from the hamburger and dump it in the Mac & cheese. Obviously make the Mac how it says on the box. It’s amazing! 🫶🏼💋🫶🏼💋

If you use veggies and chicken with bones, that can be some good chicken broth. Josh mama is onto something, but she hasn’t reached the finish line.
