As for the back of the cabinets under the overhang, my father-in-law redid his kitchen and had an island with an overhang and made a board and batten pattern by just throwing a sheet of plywood down and making the battens with some 1x3's. You can make up your own spacing and once you paint over it, it looks amazing!

Something the countertop guys teached me: don't judge the large sheets of material because the typical kitchen top uses much smaller pieces, and the patterns change significance in the smaller size. Carry a cardboard frame that's the width of your counters, and put it up against the large sheet to get a proportionate view. Large patterns suddenly disappear in a smaller view. Smaller patterns become just the right size, etc.

Turns out crooked walls must be a standard thing though (duh), because they actually had to trim the countertops on-site, which looked super intense and something I definitely wasn't expecting. Everything worked out great though, and this is probably all standard stuff to these guys.
Price breakdowns are awesome!!!! More please. It might be a cool series / playlist to do a price breakdown for all the common remodel items. Kitchen counter, kitchen back splash, kitchen cabinet, bathroom vanity, bathroom shower, bathroom tile surround, new trim, etc.
We went with IKEA for a great price on a really thick piece of quartz. None of that half inch with an overhang. The only thing is you have to check out who their installer is and make sure that they are well rated.
The oven/stove has to align with the microwave. You want your countertops on both sides to touch the oven/stove. He has to add a wood matching filler piece.

Quartz is real brittle, compared to granite. Also it has larger pours in the stone it self. Which will cause it to stain easy. When I do my designs. If I use quartz it always goes in the bathrooms. Definitely not the kitchen. But to each their own.

2700 for installed counter tops seems crazy inexpensive. When they said 52 originally I thought they meant 5200, not 52/sqft

Have you seen Click Tile? Pretty much glue a Lego sheet to the wall then click the tile into place. Real easy if you need to change it.
We work with the saber but never seen the water jet cut a bull nose profile only use it for miters and curves and corners
Also we use 100% silicone to glue down the counter top down
