That fish was NOT swimming 24 hours ago. By the look of those gills, it has been dead for at least 4 to 5 days. Coming from an experienced commercial and recreational fisherman. Find a fishmonger you can trust to sell you something fresh.

More like discada with a another discada inverted and external rim attached for coals. Dutch Oven will perform same function but wouldn't be as impressive presentation on the table. Maybe 2 of these with a coals ring and alignment ring welded to one for the lid. Not cast iron but the heavy gauge steel would work. It'd be "really" impressive for a one pot meal. This had cringe throughout the entire episode. Kinda like these were rejected characters from Portlandia. That fish dish is still confusing the hell out of me. He nails the fish to the wood and faces the fish towards the open flame, while it is held down additionally with sequoia leaves/sticks which to my knowledge have sap in them (There's a reason BBQ people do not use wood with sap). At that point whats the purpose of the cedar board really, other than to block wind? If its just something to hold the fish put it on a goddamn baking rack and stick it into an oven.
