I don’t have kids. So, I never got how hard it was to get home from work and have to cook a whole meal.. Ever since my mom has been sick, I have been coming home from work, cooking dinner for her special diet, cleaning up, and then taking care of her.. Maybe it’s a southern thing? I’m from sc and my family has always used cottage cheese. But my husbands family is from NY and they only use ricotta. 🤷🏻♀️😂 both are delicious!

Have you ever tried the pasta bake method for a quicker ziti? We brown ground beef or Italian sausage. To a casserole dish we add one box of pasta (dry), the ground beef, the sauce, and then one jarful of water. You cover it with foil and bake at 425 for 30 minutes, take it out, stir it, add cheese and other toppings, and pop it back in the oven uncovered until the cheese is lightly browned and the liquid is bubbling. It’s definitely not as amazing as the ziti recipe you did, but it’s a quick weekday option.

Kristin just wanted to tell you that I use rotisserie chicken alot and have begun saving the skin and putting it in a ziploc and freezing it. I keep adding then when there is a good amount I thaw just till they separate and oven or air fry till crispy and use them as croutons on a salad or crunchy topping for mac & cheese, so yummmyyyy!

Next time you do stuffed peppers try roasting the peppers in a 400° oven for 20 minutes with a little salt pepper and oil on before you add the filling! Makes PERFECT stuffed peppers :) nice and soft and aay more flavorful

With your bell peppers place them in boiling water for 3-4 minutes it helps remove any wax and helps soften your bell peppers and then they’ll cook the rest of the way in the oven. Hope it helps. Love your meals. ♥️
One trick on the peppers .....if you boil water and add them in after you have them cut and boil for about 4 mins then continue with your recipe, they will be soft and amazing!! Came from Kelly's channel.
Yes, when you pull them out of the water, put them in an ice water bath, once they are cooled off, pull them out and then continue with the way she filled them and everything. I usually cut the tops off my peppers and do that then fill them.
If you make the marinade in the bag before you add the meat you can save a bowl to wash later ;) Just dump it all in the bag and massage the bag to combine it all together then add the meat and massage it into the meat as normal.

If you put a lil water in the bottom of the pan it helps soften the peppers. We have the once a week every way you can make em Mexican, Philly cheesesteak, Italian, Asian and more
When I make stuffed peppers I boils them before stuffing them. It is best to do it on the stove, but it can be done in the microwave. While the water is boiling and the peppers are cooking I get ready everything else. Once the peppers are cooked to the consistency I like them, I drain, put them in the baking pan, fill and cook.

I put the peppers cut side down and cook them alone for about 20-30 minutes before stuffing them. Cooking them cut side down allows some of the water cooks out so that your filling won’t get soggy once the peppers get softer.
Girl ! You need to invest in a crockpot that automatically switches over to keep warm whenever it reaches the amount of time desired . I have a Hamilton beach and it is a life saver
When baking , add water underneath the paper to steam them. It’ll fully cook them without you having to boil them beforehand. It’ll help you save some time.
I wrap each stuffed pepper in foil b4 baking and they steam perfect every time plus all the juices collect an u can pour it back over the pepper when serving it
I made stuffed bell pepper just last week. They were good but I made the mistake of getting large bell peppers and I should have gotten ”smedium” lol They were good just too much bell pepper, in my opinion. I definitely will remake this recipe in the future.

Talking about the zoodles and you didn't think you'd like it with like spaghetti sauce, I'm the same way with zoodles and with spaghetti squash. I like both of them, but I can't eat them as a pasta substitute and tell myself it's the same. The have completely different textures and flavors. I'm making a shrimp scampi with zoodles and while It's good, it's not pasta. Anyway, love your video and I'm glad it appears you're feeling better!
When I made stuffed peppers I added more chicken stock and cooked them at 375 for an hour covered. They were tender and cooked through. The Last 5 minutes at the cheese and uncovered

My tip for cutting open peppers is to cut a circle around the stem. Then you can just pull it out and the seeds won’t end up all over the place!

When making stuffed peppers I boil them for 2-3 minutes to soften them!! I can’t wait to stuff them with the buffalo chicken mixture 😋
For your peppers you can bake the peppers for a little bit in the oven or you can put them boiling water before you put your mix of stuff in them.

I always love your recipes. Blanching the peppers for a few mins before stuffing makes them softer and not as bitter.
