    Flour, to coat
    Kosher salt, to taste
    Coarse ground pepper, to taste
    Oil, for the pan
    Rita and I went fishing with some friends and Rita was the only one to catch anything, a beautiful 3lb snapper, I’ll pan sear the filets till that are golden brown on the outside and moist and flaky on the inside
