I have watched this whole video and when the PASTRY CHEF is making CREME BRULEE,I understand that it's basically a custard,cooled and topped with brown sugar, but the way I was taught was to put light brown sugar in a sheet pan and place in the oven at 200 degrees until hard,cool it and in a food processor add on a ratio of one to one, regular sugar with the cooled brown sugar, until combined, then sprinkle on the CREME BRULEE,and torch it to light brown, and sometimes you can put whipped cream on it and garnish it with a piece of mint and a long stem strawberry, place it on a plate with a doille ,serve while it's warm and the cousin to the BRULEE,is old fashioned custard pie,very simple dish, yet very elegant and you will only find this item in upscale restaurants or in a HOTEL, no where else and they will charge you for it, top dollars, but I know the recipe.
