    Just tried a couple times and I have a few suggestions to tweak your process making your good even gooder ;-)! If you can, weigh your chicken out, and add your salt by weight. I find that between 1.5 - 2% by weight works the best. To add even more to an improved texture, put it in a mixer for 3ish minutes after the food processor to get it to a tacky feeling. You should be able to take a small scoop of the meat, turn it upside down, and shake it and it remains on your hand. This tells you that the proteins have bound properly and a great indication that you're going to have a deli smooth texture. I also put the pressed mix into the fridge for between 18 - 24 hours before cooking to allow the salt to more evenly distribute. Your video certainly inspired me to try, so thanks for sharing with us!

    I'm excited to make this. I just purchased chicken breast today for $1.99 per pound. I bought the cooker on Amazon but one with a thermometer. You recipes are so good and different than anyone else. I've made the lasagna with deli chicken and I husband didn't have a clue there wasn't noodles in it. Thanks

    I watched the other video and got a meat press from Amazon and tried it. It was so good. Looking forward to doing it again with gelatin. I'll reduce the salt next time to maybe two teaspoons though as everyone thought it was salty. And just bought a slicer from Amazon so want to try it out.

    I just got the tools and made my first batch chicken deli meat. Thank you for this terrific recommendation. Mine turned out wonderfully tasty.
    Deli chicken meat at the counter, sliced is $13 to $15.99 a pound. A pound and a half ground and cooked in the meat maker ... $3.00 and change ... and a little bit of time.

    Great tutorial! I enjoyed your blurb at the end, as well. We had a room mate for a very short period of time who was a vegetarian. She made dinner, and for the first time in my life, I did not feel sick, bloated, itchy nor irritable afterwards-it was a REVELATION to me! Now, we are 90% vegetarian, 10% really good meats. I bought this cooking tube to see how it does for lunch meats, and I can't wait to try it! Thanks!

    I have made this 2 different times, thank you works great, the only thing I did differently I used a silicone bread pan and sat in my counter chicken fry pan... Works Great!...

    This was shared to my meat rabbit group on facebook. Definitely going to try your recipe with rabbit, which is interchangeable with chicken in most recipes. Rabbit is higher protein, higher iron, lower fat, lower calories. Can't wait to give it a go!

    Just got my meat press, but instead of powder gelatin, I made bone broth. I'm going to use that gelatin. Hopefully, it turns out.

    Could you do this with already ground chicken? I made the 2 krazy ketos chicken nuggets with ground chicken instead of grinding myself and it turned out great.

      Nope, the texture of the deli cuts will be off if you use ground meat.

    Maria! Today, the meat press came and Timoteos I’m get the chicken breast to make the m into Deli meat. My question is… have you done roast beef if soo would you make a video for that?     This is great and I plan to try this ASAP. Just FYI--Amazon says that meat press connected with your link is not available currently. BUT they have an identical one on their website that is 10 bucks more! Figures. I am getting it anyway!

    Researching because I love sandwiches but have to rely on food closet for much of my food. The "meat" provided is canned or frozen ground. Got a ham press and am about to embark on my experiments !

    Ingredient quantities question: is it 1/4 or 1/2 c of broth? Video is confusing as both amounts were given for the liquid.

    the link you share for the press has a thermometer hole on top for it to fit in....I don't see a whole in the top of yours...??? Do you have the right link for the one you're using??? Thank you

      No. If you use ground meat the texture of the deli cuts will be off. Use whole chicken breasts or chunks of meat :)

      Alright I made a new batch last night and I cooked it until 155 took it out of the water and let it cool. When I went to put it in the fridge it was reading 165. It taste just as dry as the overcooked one? What the heck.. 🙈

    I went to buy the meat press from the link and I’m not sure it’s the same one you are showing.. it’s $79 and it has the thermometer attached .. but also there are different sizes .. can you please let us know what size you are using so when I make your recipe amount it will fit nicely into the container 🙏♥️

    I am really curious though. We never buy deli meat, once a year at the most for emergency food only. lol But why not just cook the chicken, season it and slice? That is what I do. Is this really that much better? It does look real good. How did you come up with this nice idea? Just wondering. Plus, who can afford deli meat?

      I buy deli meat. Every week, sometimes twice a week. It's what I grab to keep myself from eating things that are truly bad for me if I don't feel like cooking or if I want a snack between meals and I can't look at another deviled egg! 😂 Or if I'm going to be out and want food available I can eat without having to spend an arm and a leg or resort to iffy things. It's also what I treat my dog with. 😊

      Deli cuts are a staple item in many kitchens. This is a great way to make your own without the added junk ingredients. You can certainly do it the way you describe too, but this is much more like traditional deli cuts :)

      I like mine sliced paper thin (looks like you do, too) and it's really next to impossible to get that with a regular cooked chicken or turkey breast which is what makes your recipe/method so fantastic! I haven't tried it yet, but in the meantime I have found a very clean, organic deli turkey but it's pricey. And I settle for the best ones I can find for meats other than turkey - some of the Boars Head meats (but not all) are better than other brands and some of the Dietz & Watson are a bit higher quality, too. But you're right - they're not completely clean.

    Of course your puppy wants raw meat lol. Perfectly normal. A lot of dogs have a chicken allergy though so I wouldn’t even give cooked chicken if you don’t know.

      Maria's from Wisconsin. Why quibble over her accent? She speaks Wisconsonian, not Cali. They're either in So Africa or Hawaii. Hence, the darling hat to shade her delicate face.
