Just tried a couple times and I have a few suggestions to tweak your process making your good even gooder ;-)! If you can, weigh your chicken out, and add your salt by weight. I find that between 1.5 - 2% by weight works the best. To add even more to an improved texture, put it in a mixer for 3ish minutes after the food processor to get it to a tacky feeling. You should be able to take a small scoop of the meat, turn it upside down, and shake it and it remains on your hand. This tells you that the proteins have bound properly and a great indication that you're going to have a deli smooth texture. I also put the pressed mix into the fridge for between 18 - 24 hours before cooking to allow the salt to more evenly distribute. Your video certainly inspired me to try, so thanks for sharing with us!

I've made the lasagna with deli chicken and I husband didn't have a clue there wasn't noodles in it. Thanks
I watched the other video and got a meat press from Amazon and tried it. It was so good. Looking forward to doing it again with gelatin. I'll reduce the salt next time to maybe two teaspoons though as everyone thought it was salty. And just bought a slicer from Amazon so want to try it out.

Alright I made a new batch last night and I cooked it until 155 took it out of the water and let it cool. When I went to put it in the fridge it was reading 165. It taste just as dry as the overcooked one? What the heck.. 🙈

I buy deli meat. Every week, sometimes twice a week. It's what I grab to keep myself from eating things that are truly bad for me if I don't feel like cooking or if I want a snack between meals and I can't look at another deviled egg! 😂 Or if I'm going to be out and want food available I can eat without having to spend an arm and a leg or resort to iffy things. It's also what I treat my dog with. 😊
Deli cuts are a staple item in many kitchens. This is a great way to make your own without the added junk ingredients. You can certainly do it the way you describe too, but this is much more like traditional deli cuts :)
@@MariaEmmerich I like mine sliced paper thin (looks like you do, too) and it's really next to impossible to get that with a regular cooked chicken or turkey breast which is what makes your recipe/method so fantastic! I haven't tried it yet, but in the meantime I have found a very clean, organic deli turkey but it's pricey. And I settle for the best ones I can find for meats other than turkey - some of the Boars Head meats (but not all) are better than other brands and some of the Dietz & Watson are a bit higher quality, too. But you're right - they're not completely clean.
Of course your puppy wants raw meat lol. Perfectly normal. A lot of dogs have a chicken allergy though so I wouldn’t even give cooked chicken if you don’t know.
