    I save the onions for last when possible. Then the cutting board, knife, etc., go into the sink and I rinse with water.

    A trick I learned when I worked at the school cafeteria. To keep onions from burning your eyes, keep them in the fridge. It's the oil in the onions that get in the air as you chop. When they are cold the oil don't squirt in the air near as much. Try it, it really works

    Making our second batch of this now! We really liked the first batch we made. My wife would dump the entire jar in a large bowl and mix it with an electric handheld mixer.

    I agree about the Rada knife sharpener….I LOVE mine! I have quite a collection of the Rada knives and love them too. Thanks for another yummy canning recipe! Sure wish I could find chicken on sale so I could get busy with these creations😋😋😋

    They have changed the headspace for chicken to one and a quarter inches.. This was done very recently. Just an FYI.

    SO wish I could buy poblanos! Any ideas about a substitution? Outside the southwest, it can be very difficult to buy the ingredients I want; the flavors I grew up enjoying and crave. Sigh. This looks so scrumptious. My mouth is watering. What a treat jars of this would be!

    I got bone in thighs and legs at Sam's for 1.08 yesterday, canned them this morning. Boneless was like 2.20. Still the cheapest I've seen in awhile. Need to make this one!

    Yep, I need to add this to my list..lol... I have never skinned a pepper before..lol.. first time for everything. Today I canned a chicken pot pie base. Day before I did seasoned browned gr beef. Tomorrow I need a rest...lol... I need to get some beans and ham done up soon.

    I would love to see enchilada chicken canned. I have been told the tomato or pepper sauces will scorch because the canning time is longer because of the meat. So I’ll be watching for that.

    I can not wait for you to show use how this turned out, looks like a winner. Chicken was on sale here this week for 1.40 lb. wish I had bought more. Wonder if you could do those in pint jars instead of quarts, will wait and see about how much you end up with when you empty the jar, hurry!

      So if you had siphoning, are jars still good to place on shelf or use immediately? I am new to canning...thanks

      They are still safe to put on the shelf. They sealed fine. If your siphoning leaves you with a lot less liquid and the meat and veg are way above the liquid line, then use immediately. 😊

    Jeni I've had others post that they've had problems with the Pur canning seals, buckling. I know that you've canned with them, any problems?

      I haven’t had any problems with buckling. I had one seal pop on my shelf, I found it yesterday and checked the rest. It was a white compound pur lid. Other than that, I haven’t had any problem making and I have used several boxes of them. 😊

    I bought Pur pint jars. The jars were good to go. The lids had about 50% failure. I had to reprocess with Ball lids.

      Did you use the lids that came with them? White compound? The boxes lids are better. 😊

      You use the the same as fresh roasted. Just defrost them first.

      Thanks! Nope, the recipe isn’t approved because I just wrote it and the USDA hasn’t started picking up my recipes and approving them yet! But, chicken is approved, raw packing is approved, onions and peppers are approved, spices are also approved. This is MY recipe NOT in Someone else’s book. 😊

    This would be great for quick lunches and to pack for going camping. Kids love taco! I make my own taco seasoning and jar it up. About how much of it would I use in place of mix of spices you put in? Basically my taco seasoning has the same as what you use, including the Mexican oregano. Thanks!

      It would be 11 1/2 to 12 tablespoons of taco seasoning for 14 lbs of chicken. 😊

    I have a question? I have been using my Pur jars and lids with my steamer canner. I have had fallers with both the white lids and red compound lids. So would they work better for pressure canning or even just water bath canning with a regular canner. I want to try just nervous because I don’t want more fallers. I have noticed they have worked good for you when you pressure can. Thank you 😊
