    I made these over the weekend and ate our first jar last night. Outstanding recipe. I added more jalapenos (didn't deseed). I also added two bottles of Mexican beer which of course stretched and I was able to make more jars. Really, super duper tasty. Thanks Jeni!

    2 days ago I canned the chili Colorado and WOW was it great. We had it for dinner last night with pintos and tortillas. Canned it in pint and half jars. I used hot dried red chilis I live in Albuquerque so hot is a must. I will be canning it again when I find pork butt at a good price. THANKS

    I have only water bath, been nervous about pressure canning, but after watching all the canning calbs and you and sutton daze I am ready to give it a whirl. I hope to purchase a press. canner this summer and I have quite the collections of recipes and ideas from all of you. I thank you all for making it look so simple.

      Don’t be nervous Sharon ! I never even did water bath canning before and I’m 61 now ! (Late bloomer! But I did watch my Grandma and Mom can some as a kid! ) My only regret is that I didn’t start sooner ,especially when my kids were little so that they could have tasted all the delicious food made from canning my own food! It’s work but if you love water bath canning it’s not really much more .. it’s just a little longer time on the cooking under pressure process and a few other rules /details to follow ! I bought a Ball pressure canning book and after reading it and doing my research I felt more confident in the skill level . Once you do it ,you’ll wonder , why was I so afraid ?! It’s easy ! You can do it! Blessings!💕

    So I’m learning your enchilada sauce is a base for many of these dishes - so yep this will next along with some chicken in enchilada sauce. Thanks Jeni. Im hoping the For Jar lids aren’t turning out to be duds. I’ll be using them along with Pur lids in my next project

    Loved this video Jeni! Could you please do a video on the different types of fresh/ dried chilies you use ? My household is more of a mild chilies home but I’m kinda new to this ! We love mild Mexican food and you have inspired me so much that my “to do”canning list is getting very long ! But that’s ok cause I love canning. Oh I saw another fur baby I hadn’t seen before he was telling us ,”yeah baby!” “It’s smelling mighty yummy in here!”🐾🐕‍🦺💕Blessings!💕

    IT can still seal in time, as they set for the night before washing, i wouldn't count it out just yet

      If they aren’t sealed within the hour after bringing out from the canner, they aren’t going to seal and this one did not.

    I came to rewatch about processing the peppers, I found a recipe for chili marmalade but I’m going to do your method for the peppers. They just threw them in and let boil 30 min then discarded, love your knowledge!

      OMGosh you’re in for a treat. And Jenni’s recipe looks like a winner. You can add beans, make burritos and/or tacos, enchiladas, mix with scrambled eggs, or spoon it on top of over-easy eggs.

    I’m making this today as we speak or as I type or as I dictate lol sauce is wonderful. And at the same time I’m pressure cooking a 25 1/2 Pound turkey oh the meat is so good then I will be canning that. Gonna keep cooking canning and preserving so that I have food. Thank you for all your recipes. This one chicken Marcella I made tweaked it just a little bit so that I could have the gravy wonderful. Did not change the proportions on the spices just made a rule and then dump the liquor again. Good good good win win win

    I get like 500 seed catalogs and not one of them has Mexican oregano. Not nice of them at all. Will have to order some from your link

    I’ve seen some save the pulp. Dehydrate it and then powder it or flake it for pizza. Have you tried that ?

      It says in the box just wash and use, no heating. I had to heat them for the water bath. For the most part l, they seal well. 😊

    After watching this video 3 times I will be canning this tomorrow. QUESTION can you can just can the sauce? I also will be using pork so it will be more of a carne adovada.

      You can absolutely can the broth. Using pork will turn it into Pozole! 😊

    Seems like Florida is 10 lbs of pressure for 75 min . We’re right at sea level.

    Looks delicious! I love my chili but always looking for something different to try. And I so happen to have those exact chilies on hand! Oh and BTW....I see your "barking cleaners" are crumb surfing and doing their job lol! My doxies are great barking cleaners. If they're not already crumb surfing, if I drop something I know won't hurt them all I have to say is "Uh Oh" and they come a runnin' lol.

    I find it much easier to use a food mill rather than a strainer for the chiles....more pulp, less skin and seed

      The screen in the food mill isn’t fine enough for me. I don’t like tiny bits of pepper skin in my finished product. But you can definitely use it. 😊

    Can this recipe be canned in the hot pack method? I’d like to par cook the beef. Also, USDA guidelines state not to add liquid to raw pack meat can you explain your contrary method? I’m a new canner & I love your recipes and I want to be safe. Thx

      You can par cook your meat if you prefer. This is considered a soup or stew. You can also add water or broth to raw or cooked meat when packing to have the correct amount of headspace. 😊

    Recipe sounds delicious. Can you use ground beef and if so do I add it raw? I have so much ground beef in the freezer. Lefty loosy Righty Tight, thats how I remember… lol

      You can use ground beef, cook it and drain if the fat first. 😊

    My husband does his much the same way as yours but he toasts the chilies first. I never thought about canning it but I am now! Palm to forehead moment, lol!

    Are those the quilted Pur jars??? Only asking because I canned beef in them and had a really hard time cleaning the on the inside after emptying the jar because the inside has the quilting pattern on the inside also?? Anyone else?

      Yes they are. I use them constantly and I wash them in white vinegar and did hisp. And I never have a problem getting them clean. Try vinegar in your dish water. 😊 I do hope you can up your chili Colorado!!

    Couple of things. 1. My local Mexican restaurants serves this, the chili sauce looks more like brownish red gravy, thicker than yours. Is yours Sonora style and they’d is another region? 2 Hard to find Mexican oregano locally, ordered some online, no flower buds, but does not look or smell like Italian oregano. Do you think I got snookered? Thanks

      You thicken this when you heat it up, but if you like you can thicken a little with therm-flo before canning. The color really depends on the peppers you use. These peppers are a little lighter red than normal. I’ve never had Mexican oregano without the buds, not sure in that. 😊

      I doubt it since I had 4 fail on ball and Kerr . They seem to sit just fine. It looks completely fine, nit sure why it didn’t seal.

      Process for meat time 75 minutes for pints and 90 minutes for quarts. It's all in the recipe link in the description box.

    I was buying meat for this recipe yesterday. I ended up getting pork butt. $2.19 per pound was just too good to pass up for beef at over $4 per pound. Think it will taste just as good?

    I have always been fascinated with Colorado Chile. It seems like everybody makes it to make it as hot as I can and with Ohio taste buds but that's not quite where you want to be. Thank you for showing us the way and how to do it we will definitely try this, do you have a recipe online or in your website for this without canning to give it a test run just a question if the answer is no it's no

    Why do you use chicken broth could you use beef broth since you put beef in.

      Oil and flour on a pan to make a roux, then add chili, cook till thick! 😊

      It’s chili. Eat it as is, thickened or put the meat in a burrito, thicken the sauce and pour it over top. 😊

    Could you dehydrate your pepper pulp and grind for additional uses? Or would it be bitter or something else not so good?

    Do you make or mix your own chili powder or do you order it and if you order it what kind do you get. We only have pretty much Kroger and McCormick brand available locally but for this recipe I would almost be willing to order.,.

      I get the New Mexico chili powder from the Hispanic market. It’s their store brand. Any New Mexico powder is good! 😊
