  • In the video today we will make a British classic Lemon Posset. A delicious creamy dessert that is simple to make with only 3 ingredients. I will also show you how to make this popular refreshing British dessert using a cream that is low fat, for all those who like me live abroad and cannot find/get Double Cream.
    Traditionally Lemon Posset used to be served as a warm drink with Alcohol and used as a remedy for colds but these days it is a refreshing dessert that can be served with some shortbread to contrast the texture and fruit for colour and complementary taste.
    RECIPE
    3 Lemons (zest and juice) (about 100ml of juice)
    130g-140g Sugar (I like it less sweet so go for 135g)
    600ml Cream (in Germany I use 30% fat)
    Makes up to 5 small portions.
    Tips/Instructions
    Mix the lemon zest with the sugar. If you would like a silky smooth texture then place the lemon posset through a sieve once it is cooked.
    Add your cream to the sugar and lemon zest and bring to a light simmer, stirring continuously. As soon as all of the sugar has dissolved start a timer for 5 min. After 5 min I like to switch to a wooden spoon, so that I can feel and see the texture more easily.
    A 30% fat cream I usually cook for about 15min. If you have a slightly higher fat content then you won’t need to cook for so long.
    Take off the heat the stir/add the lemon juice. Then pour into your serving containers and leave to set for a couple of hours or overnight.
    Toppings (Blueberries, Raspberries, Pomegranate, Candied Lemon peel (recipe below), Mint leaves, Powdered sugar) I also like to serve it with some Shortbread (Recipe Below).

    how do you calculate the FAT in the cream when the recipient does not give you a percentage??

      Thats a great question, I only buy cream with the percentage written on. But if is is not then most regular creams have around 33 percent unless it states otherwise.

      I have not used this, but you could use any small bowl shape, As long as you can fit it in your fridge to cool down, you will be fine:) Thanks for watching:)

      No,please do not mix… but you can put a square of dark chocolate as a twist when the posset is ready.
