I am so happy skittles went back to lime green instead of green apple. They were lime a long time ago, then switched to green apple for years but recently went back to lime here in Canada. I don't mind green apple. It was just everywhere. Lime became rare for fruity candy.
If you don't already, y'all should lightly toast the pecans (Be careful! They burn very quickly!) before coating ANYTHING with them. It will enhance the flavor of the pecans and will add a wonderful extra layer of flavor. Southerner born and bred speaking...have harvested, shelled and cooked with LOTS of pecans!

Some would stay out in the nutbowl to snack on. The rest would go into the freezer for later. Those pecans were always sweet & tasty. Yummo!
I think you should try melting the caramel, pour it onto the cooling table and spread it out really thin. Then after it is cooled cut it with Steve's bark cutter into square and wrap the marshmallows with the squares. Works great that way on my marble countertops.

You may want to consider getting measured portions of the caramel and rolling it out with a rolling pin that has a guide for thickness. You'd do this in between sheets of parchment and maybe have lines drawn in it for the correct sized rectangular strips (as opposed to the circular tortilla press ones). After that, you just get the bench scraper to cut and release the strips for the marshmallows.
Cutting the Caramel the width of the marshmallows, and then using a small round cookie cutter to cut the bottoms and the top. It doesn't matter if there's a gap. Because you're gonna put chocolate over it and nuts. Thank way you can make a bunch of caramel parts all at once or have someone cutting and someone assembling. The marshmallows wouldn't be as bulky or have more caramel on than the necessary.
Sorry I think I got confused, what would the round cookie cutter be cutting!? But I agree, there’s so much that less caramel will be fine, and if it becomes more time efficient maybe that means prices will stay the same for a lot longer.
@kristin_cool6537 if you cut the caramel to the width of the marshmallows and wrap it around, the top and bottom would be blank , so you use the round cookie cutter to make a disk for top and bottom instead of using the caramel to stretch around. It would make it cleaner looking and it maybe not use as much caramel. Caramel is definitely hard to work with when cold so rolling it out and making cleaner cuts would speed things up. Time is money. I hope that helped make since. After the first time I saw you all make these I tried it and it worked for me. I run a home bakery and make these as well now.
I'd be worried that the caramel would stick to the rollers. I dunno if you want to spend all that money on a pasta machine just to ruin it. Even second-hand pasta machines are expensive. Although the rollers are stainless steel so I doubt that this would actually be the case.
To keep the nuts from coming off the pop when you bag them..take a disposable plastic cup cut the bottom off then slip the bag over it. Use like a funnel

When using a tortilla press, whether for dough or caramel, everyone uses a freezer bag cut open as an insert, no suction issues and you just peel off the plastic. I see you eventually got some parchment paper. :) Also, I see everyone wearing long sleeves... perhaps put a bowl in a bowl of warm water and set the caramels in that as you start working? Not to melt, just to warm. And rather than changing the chocolate on the turtle pops, how about changing the nuts? Sprinkles - rainbow or chocolate? Peanuts? How about dark chocolate dipped with white chocolate mini chips? Or white chocolate with dark chocolate mini chips.
I recommend a rolling pin to roll out the caramel. Maybe have a small heater there to keep the surface a bit warmer so the caramel rolls nice. Then cut into the size of strips you need with a pizza cutter so you can roll the strips around the marshmallows.
I used to buy sheets of caramel to wrap around apples for caramelappels they were sandwiched between parchment paper, and it works perfectly! IMO, you should definitely do it this way. First start with one piece of caramel and work your way up to multiple pieces.
Chocolate and citrus work surprisingly well (Terry's Chocolate Orange), so it wouldn't surprise me at all if the lime worked. The only problem is that the green Skittles don't really taste that much like lime. I don't have a favorite Skittle or Starburst, they're all good to me. I'm Mexican and I can confirm this, you need plastic sheets between the tortilla dough when pressing, if not the dough will still like the caramel. And maybe heating it up a litlle with a heat gun just before pressing would help too.
There are fruit flavored jumbo marshmallows that I'd love to try covered in chocolate. in dark, white, or whatever's the best. 😍They don't need nuts on the outside, it could just be sprinkles. 🌈
if you want to use the tortilla press and not have it stick, use 2 layers of grease proof paper or silicone baking sheet, then its not sticking to the press and you just have to peal it off the sheet after. using silicone baking sheets will make the press get it that little bit thinner too so you might not have to make it thinner then

ah this reminds me of a product made in the late 80s or early 90s by Kraft Caramels called Wrappables, they were flat circles of caramel you bought in a package at the store and instead of dipping apples, you wrapped them in the caramel.
Why not use a pasta maker to roll out the caramel? You can run it through a couple of times to warm it up and thin it out. Then you can cut them in ribbons for wrapping.

You should try using a pasta press where you can start at a higher thickness then get thinner and have sheets of caramel that you could cut into squares the needed size. Use powdered sugar to make sure it doesn't stick similar to how you would use flour to make sure pasta doesn't stick to the rollers

Y’all need a larger food processor. I am sure that you would be able to get one somewhere and that it might be worthwhile to buy maybe 2 of them with 2 extra canisters and parts and with the biggest one so that you can actually chop of crush up larger amounts especially for the holidays when you’re needing tons of nuts, peppermint pieces and other toppers.

Add wax paper on both leaves of the press. It should be easier to take off. Wax paper or plactic.
not waxed paper but parchment paper would keep it from sticking.

This is a great idea! Use parchment paper with the caramel inside, so it wouldn't stick.
i use some powered sugar or corn starch lightly coating the caramel. it helps going through the rollers.

I am sure that you would be able to get one somewhere and that it might be worthwhile to buy maybe 2 of them with 2 extra canisters and parts and with the biggest one so that you can actually chop of crush up larger amounts especially for the holidays when you’re needing tons of nuts, peppermint pieces and other toppers.
