in postman we can do it equal like this. but maybe this is best alternative we can found and the best things about cli. we can transfer our mock easy way.
For SOAP I used the free SoapUI, at work sometimes the paid SoapUI Pro. In both cases I could mock and validate as well as use a Maven Plugin to run testsuites. And variables all over the place. I wasn't as impressed with its REST features.
This is cool but I would like write code instead of doing UI clicking. For me it would be benefitial to have a small API server implemented in typescript which I can modify and run in Docker Container. It will be repeatable 100% and it is code which is easier to manage than the UI. Can be kept in source control. I can agree that this already not a Mock but real server

we can also use Faux API platform, which gives us a lot of space to store values in APis and access it anytime we want, without any limits
