Great video as always! I love these old tiki recipe books. I pick them up at thrift shops and vintage markets whenever I see them. My theory is that since these books were for the consumer market, the recipes were changed a bit. These establishments were super protective of their drink recipes. I don't believe they'd be giving away the keys to the kingdom to every Tom, Dick and Harry by broadcasting the true recipes and techniques. They alter them just enough to be passable, but not exquisite.

I had been a viewer during the pandemic then life happen and it's good to get back in touch and see what's new. Mahola🙏

Spike, I was there at the Colonel’s. The pineapple and cherry were mixed in with the drink and left in the glass. My mom had a copy of that book. Sadly, I know not where it is. The sweet and sour came out of a bottle and I remember it as being more sweet than sour.
A new Tiki/Tropical themed bar just opened near me, tonight was their first night open. I'm going to give them a couple days to work out kinks then I'll give them a try. Can't wait to try their drinks though.
Hey Spike, longtime listener first time caller, love your videos. Would you consider doing a series on different types of rum? Dark vs light? How does the country of origin affect the flavor? What rums are essential for the home bar, especially if you can only have a few? When making a drink, how do you decide which rum to use?
I recommend you buy the Smuggler's Cove book (if you don't already have it). That will answer a lot of your questions. I'm sure Matt refers to that to get the rums as close as possible to ones described in the recipes he is making.
I think the pineapple and cherry we’re supposed to drop into the glass first…it didn’t say to put a spike through or balance on the top 😂 but I bet you knew that too 😜😅 Great videos! *new subscriber here. Found you through Kevin Kos 😍
Welcome aboard! Why do you think they should be in the bottom of the glass (honest question)? The traditional garnish at Trader Vic's is a 'fruit stick' consisting of a pineapple hunk and a cherry skewered together and placed on the rim of the glass. If I missed something, please let me know.

It makes sense for them to be a part of the drink to enhance (subtly) the flavor profile but also the recipe was pretty clear to “follow” his directions…PLUS I love to fiddle with tasty bits in the bottom…with a pick or straw…like a little challenge to see if I can get me a piece up; or sometimes just to twizzle it about 😜I play with my food too 😁

The more I think about it; I think you were supposed to put the pineapple and cherry in the bottom of the glass. I think the idea was to treat them as ingredients, rather than garnishes. It makes sense since they call for a mint garnish at the end and the pitiful amount of orgeat called for. The fruit is making up for the lack of orgeat. The instructions were terrible so I don't blame you for that assembly.
