When I saw this video I wasn't sure what to expect. I love Chael Sonnen but I don't think I am crossing any boundaries when I say he can get long winded at times (I do the same thing so nothing but love here). But he is actually a very effective teacher. He really explained this well while keeping it short and concise but also showing everything step by step instead of in one motion. Awesome job!

Yeah I never really used the knee tap either it never really occured to me. Very effective and safe move tho. You get punished for very unsafe and overcommital moves like double legs and single legs. But a lot of clinch stuff is pretty safe and you can chain stuff together while still remaining defensively responsible. If they are clamping down on my right arm I'll fake a single leg and go bars gar(head on inside) double leg or if you are athletic cut the corner. Don't forget about body locks. There are only a few moves from the over hook mainly the fireman's series and the hip toss. If you have the under hook you are usually in better position.

If your opponent is strong, how do you prevent them from clamping down hard on your underhook to twist your elbow inwards?
I bring my elbow close to my body
Chael sonnen also said that you can circle into your underhook side while stuffing his head.
Jack the underhook up and shoot your hips in. It's not a passive tie to hang out in. Use the underhook to control mat position
