The vegetables should be cooked first, then when they're cooked add the miso. Just my experience from living in Japan for 15 years. Yours looks really delicious!
Sounds great! You can actually use a strainer and a wooden spoon after everything is cooked. Just turn off the heat and add miso pushing the paste through the mesh. It is much easier and preserves the goodness of miso and floavor as well:)
I got your book and am eating things I've never had before. I am getting so hooked on your recipes. Tonight we had the nori burritos and it freaked me out how much I enjoyed them. So tomorrow I am going to make your miso soup for the first time. I thought vegies were boring then I watched Bear wolf down his vegies so he inspires me to wolf my vegies down too!

I don't understand why you think it's so odd? I know kids way younger than him that cook just fine with help from adults. She's teaching him to be self sufficient instead of being a 40 year old man that can barely make a sandwhich.
Its the people who never got to use knives when they were kids who cut themselves all the time because they don't know how to use them safely. He is cutting tofu, its very soft and he is not rushing it.

if you have an asian food market near by, you could most likely find a tub of miso there. miso is refrigerated.
Look for organic Miso Master. The red and white miso they make is amazing.
