My units say you need a cat5e.
I ended up buying cat 6 cable from Amazon.
Would that affect how the units operate? Or am I ok?

Cat6 will work just fine. A Cat6 cable is similar to a Cat5 ethernet cable - it consists of four pairs of twisted copper wire. However, it provides you with much more functionality. A Cat6 cable has a bandwidth capacity of 250 MHz, for example, and it offers you speeds of up to 10 Gbps. It's also compatible with both Cat5 and Cat5E cables.

Ok so I get how to install the P2P, the question I have is. All I want is a camera to be in a horse stall. She’s getting ready to foal and I just wanna watch her on my iPhone when I’m at work. I don’t need a DVR or anything I just need to know how to connect my usb camera to the slave end at my barn.

One way to do this is by using a device called a "USB network server" or "USB over IP" server. If your Wi-Fi network has a password setup, then yes. It will be the name of your current network.
