Charcoal natural method is more tasty
Traditional one is better, electric bbq was made for convenience and if you want convenience then just use oven/tandoor or on a stove.

As per instructions, the steel tray needs to be filled with water for better results
Personally, I won't like steam in BBQ. Without using water, I've tried to keep it close to the coal BBQ technique
It's for the items to remain moist and juicy and not turn dry.😅

Does this barbeque gives that smokey taste as well like in the traditional charcoal one ?
Light a small charcoal in a small plate and then place it in the tray, maybe that would work, else that flavour would not come logically, because this is just heat from the setup and that flavour normally comes from the charcoal fire
