It's true, you are stripping the nutrients from the squash. You can cut in half, lengthwise, put face down in a glass rectangle "lasagna" pan with an inch of clean water and cover for steaming. It works as well without "nuking" your food.
Yes you can put pasta sauce on it but it is not the same as noodles. Start with butter and garlic. Maybe some shrimp? Or flatten in a baking dish and add some pasta sauce and cheese. Bake till cheese is melted. Try different things.
The microwave is no more harmful to nutrients than any other cooking method, in fact some studies suggest microwaves might actually be better for nutrient retention.

You're literally taking all the nutrients out by doing that. Don't be lazy kids...cook like the old days. It will save your life

The only way to strip nutrients form a food like this is to bathe it in chemicals and then rinse them off.
