Great recipe! Will be making this one for sure! Why not use the butter wrappers to grease the pan, instead of spray? It tastes so much better, and doesn’t waste what’s left on the wrappers. Also, you could simply put the shortbread in the oven, and THEN pour the filling quickly and carefully, then shut the oven door.
I am proud to say I did it! It does not look like the last picture shown bright yellow, but it does look like the one shown in the pan as a finished product, The crust is profoundly delicious . I truly thank you for that, since I had always been lacking in that department! I'd like to add my little tip on juicing the lemon: I prep the lemon first like I would a grapefruit cutting in between each section and then I juice it. You will receive abundantly more juice (for some it might be a little much but I find I use less lemons by doing this first.
I love the look of your lemon bars and I love lemon desserts and this one really have me excited and I have to try making it and see how it turns out. The main thing I have to purchase is the lemons since I don't have any at home and upon seeing your recipe I definitely have to make some and save this recipe so I can continue to make them. If you take your sheet pan over to the oven rack then take your liquid over to the oven set it on the oven rack and then pour the liquid in you wouldn't slash as much I would think. I'm not sure it just sounded good LOL these look really yummy I think I'm going to make some

You've got your lemon upside down in the juicer.
Put it cut side down so you get all the juice out

Squeeze your lemon upside down in your lemon juicer, you'll get more juice :)
I just learned that! ...its why the holes are on the bottom! it turns the lemon inside out and the seeds don't get in the juice. :-)

How many grams is a stick of butter? Sorry I live in a 3rd world country , they come in 200gm bars.
No problem 1 stick or 1/2 cup butter is equal to 4 ounces, or 113 grams
I enjoy lemon bars but these are too sweet for me for the amount of sugar used felt like I was going into diabetic shock
You might want to look at the last sentence of the recipe. You don't use a cold knife, or cold water, you use hot water and a hot knife.
