I’ve found the key to whipped cream is making sure your cream is really cold, as well as the bowl and the whisk attachment. Sometimes I add my cream to the bowl and put it in the fridge for a little while to chill and then start mixing it up. Then I add a tablespoon or so of powdered sugar and bit of vanilla and start mixing… always turns out great. Thanks for the yummy crockpot ideas Mindy!
Years ago Rachael Ray said she’d take the leftover chipotle in adobo, blend up the peppers & sauce, pour into a ziploc baggie. Lightly score as it freezes into tsp or tbsp portions. Break off as needed. Works like a charm. Sometimes I’ll substitute an ice tray for the baggie.
We moved into a new house this year and I can’t even begin to describe the amount of heat my gas oven and stove put out. It’s always 10 degrees warmer in the kitchen when they’re on. Good for the winter, not great in the summer. I’m LOVING the crock pot/instant pot/chilled meals for the summer. Keep ‘em comin!
I make all of my cheesecakes in my slow cooker. I have a few and I use two for making them. I LOVE that I can turn it on and go to bed actually. I actually bake quick type breads in it as well... The best!
Add powdered sugar to the heavy whipping cream. It will stabilize it. I also always add a pinch of salt and a dash of vanilla extract. It will hold in the fridge for days.
Looking forward to trying this barbacoa beef! Tip for freezing the chipotle peppers…line a baking sheet with waxed paper place the individual peppers on the tray and flash freeze. That way, you can pull out just the number you need.
I make whip cream all the time, the trick is to start slow and gradually increase your speed. You have to watch for when peaks start to form, and hold shape when you pull your beaters out. I also use Dr Oetker Whip It as a whipping cream stabilizer. If you beat your heavy cream too fast, you’ll end up with butter.
Whipped cream, chill well the bowl, beater and whiping cream. Also it looks like you do not have much whipping cream in the bowl of your stand mixer so use a smaller bowl and hand mixer so the cream hits the whisks higher. That should make it no fail whipping cream for you.
I make the marry me chicken. All the time. Love it. Not in a crock pot though. Try adding a little oil from the sun dried tomatoes. Add a little more tomatoes.
I just found your channel. I love your crockpot, especially the saute function!! I know it's Cuisinart but can you, or anyone else reading this, tell me which one this is? Please? Your recipes look amazing!!
11:42 omg I was dying laughing with you over the food processor 😂 I use mine a good bit but still always have issues with putting it together like you did, great video! ❤🎉 thanks for being real for us❤
😂 Totally laughing while watching you with your food processor. Been there, done that so many times. Once I even sent my husband to Kohls to buy me a smaller version of my Kitchen Aid food processor because I absolutely had to process many, many lbs of tomatoes that day. Well, come to find out, the reason my large Kitchen Aid wasn't working was because I didn't lock a piece in. 😂 Luckily, my oldest daughter was thrilled with the smaller food processor.
An American woman recently told me that you don't often have no-bake cheesecakes? There are many recipes here, so it may be worth trying? But the Oreo cheesecake looked amazing! Thank you for the video!
I love using my crockpot it’s makes life so much easier. However my husband hates anything out of a crockpot😩He said growing up that’s all his mom used and he got so tired of crockpot food😆🤦🏻♀️
This video was just in time for me to use the new crockpot I got yesterday! I never thought to blend all ingredients into the ninja first. What a game changer!
These recipes look so good !!! That cheesecake looks amazing ! I noticed that you and I have the same washing machine ! Mine completely broke after 2 months of use, the entire computer brain fried. Took a while to get it fixed, but it works ok now. I love Earth Breeze detergent too ! Most loads I only use 1/2 sheet. If you use an entire sheet per load you only get 30 wash loads from the package. Thanks for sharing these delicious meal ideas Mindy !
That last recipe really spoke to me! I have a beef roast that needs eating up soon and boy that chipotle sauce looked good! Thank you for sharing some great crockpot ideas!❤
Mindy, I like to blend up the chipotle peppers in the sauce and measure out by the tablespoon anytime they’re called for in recipes. Almost always the pepper needs to be chopped anyhow, so the blend/purée step at the get-go makes them easier to use. I store the purée in the fridge; it lasts quite a while. I’m also a contact wearer and have made the eye-touching mistake, so this helps me circumvent the need to handle the peppers. 😁
To be fair that food processor seems needlessly complicated, I've had a basic $40 Hamilton Beach one for well over a decade and I love it, it's very easy to use. There are easier ones out there!!!
You should try stabilized whip cream! It uses gelatin to help it set and not turn runny! Game changer for me, used it for my son's birthday cup cakes for his outdoor party.....in July!
I don't have a crockpot, and won't be buying one until I have a much roomier kitchen (apartment living really is a storage nightmare sometimes), so I skipped this video. But I wanted to comment on it because every time I see the thumbnail, I think with amusement, "That's just so Mindy." Adorable, funny, and accurate.
I recommend a no bake cheesecake - I do mine in a loaf pan and pop it in the freezer, so no waiting 24 hours! (Also, smashing cookies for crust in a ziploc with a rolling pin beats struggling with the food processor!)
I literally saved this recipe from eating on a dime last week. I just have to find cream to make it. My store was out. So glad to see this one being tried here.
Your cheesecake reminded me of my younger days...I found a new york cheesecake recipe in a magazine had a shortbread type crust, mix, bake, cool while making the filling OH MY getting it together wasnt bad but bake at 400 for x time, turn oven down to 350 for x time, and i think 1 more time. Then turn oven off, leave door ajar... it was like 6 hours and i just put in frig. It was good but man i should've read thru instructions and not done on a work night
If you check out the info…… Instant pots use less electricity and heat up the kitchen less than crock pots…..I can do two chickens in my 12 quart instant pot in 1 hr…….or a little more depending on weight. I pick the meat off and throw the bones and scraps back in and make yummy bone broth in the same pot…..just saying how nice they are.
Lol no sponsorships with that food processor 😮😂😂😂. I have had my food processor for 16 years absolutely love it. In that same time I've also burned through at least three blenders. I need to upgrade to the Cuisinart. I think I have a Black & Decker.
I like using the food processor to smash cookies but sometimes I just smash them really well in the plastic bag. I let my kids go at it usually with a Mallet lol
I have the same problem with my food processor..I have used it once in like 7 years! 😂 I wanted it so bad, but, it kicks my butt! I end up just using my blender. My crock pot brand crock pot also cooks really hot Imo. We actually thought we needed a new one. But, hearing you say this makes me think it's the brand. Ours isn't that old maybe 5 years or so.
The best way to have foolproof whipped cream... buying your own whipped cream dispenser. I love it, because you also can flavor it and sweeten as you wish. I often just flavor it with vanilla and call it a day. It is great for coffee drinks or to fancy up jello, not to mention to add to berries for a simple dessert. We always have it in the fridge :)
Did you taste the cheese cake? How was it? Girl, I don’t even know why I have a food processor… I hate using it, but when I go to use it….I struggle, more than you did, believe it or not!! It’s time to donate that “useful” item!!! 🤪😜😂
I did, and it was good! I’m just not a huge cheesecake fan, so I can’t really rate it compared to others because I rarely make it. I usually choose things like cake or cookies or ice cream as desserts. But I was really fascinated to find out if I could make a cheesecake in the crockpot!
I pierce it and place in the microwave for 3 minutes. Then split, remove seeds and I popped mine in the air fryer for about 15 minutes because I didn’t want to turn on the oven. 😊
Not a criticism but did you boil the noodles on the stove for the marry me Chicken? And how did you cook the squash... you said you were not wanting to use the microwave. I'm trying to make some stove free meals and I get stuck at the noodles?
I did for this one and I roasted the spaghetti squash in the air fryer. But had I not been wanting to keep the chicken whole for plating, I probably would have added broth to the crockpot at the beginning and then cooked the pasta with the sauce at the end and shredded the chicken.
So - it is just me or do you use more than the 60 in a single package of the Earth Breeze a month? I bought a "full year" of 12 of them and am ahead of the one package a month. We're a family of 6.
Food processor is easier to put together empty 🤣 If you haven’t used it to make your own bags of grated cheese you’re missing out…and wasting cash on prepped food. It’s a pain to clean but I do those big Costco blocks and freeze the shredded mozzarella in portion bags.
Potentially controversial opinion here: you did not need to use the food processor to make that cheesecake. The recipe did you dirty. Food processor may make it easier, but you could crush the Oreos with a rolling pin. It wouldn’t be as fine as a crumb, but as long as you didn’t have big chunks, it should be fine. And the cheesecake filling mixture could be blended together with a hand mixer. I don’t know if you want to make that recipe again since you aren’t the biggest fan, but I think you could skip using your food processor if you wanted to try it again.

Good to know!
yes! I learned this from an Alton Brown show. I always use a metal mixing bowl and put that and the whisk in the freezer :D
Oh great tip!
I just buy the chipotle sauce. It’s already blended for you! Then I freeze in a baggie, and break off portions as needed.

Looking forward to your chilled meals next video. 119 in Phoenix with a night-time low in the upper 90's!
I use my Ninja blender whenever I need to process oreos for Christmas oreo truffles. Works like a charm
Some people not think of this but I have used a toilet plunger to help with our clogged sinks. Works wonders!
I actually tried this before and it did work

@SMM Big smile about not wanting to get out your food processor…I think most of us relate but since you were putting in Oreos, worth the effort! 💕
haha! so true!
if you put sugar in your whip cream use powered sugar not granulated the powered sugar has cornstarch in it and will help the whip cream set up better
I did. It just didn't set up for me this time. I even chilled the mixing bowl.
Summer loving while I’m watching from a freezing cold Australian winter :(
I absolutely love how you kept it real with the food processor! I thought I was the only one who struggled with them! And I am a degreed chef😂
I have really been appreciating crockpot videos because my oven is currently broken. Please keep them coming! ❤
for whipped cream: use a metal bowl and freeze the bowl and the beaters.
See, I did that, and it still didn't set up for me. Maybe next time.
@@SeeMindyMom bummer! I wonder what the problem is.
Maybe y’all would like tinga? It’s a type of shredded chicken that would require some chipotle peppers in adobo 😊
Oh good idea! I’ll look that up. :)

Thanks for the great recipes. I'm using my crockpots alot during this heat. I'm ready for some cooling off rain tomorrow night in OKC.
I’m hoping we get some here in Tulsa.
We use the chipotle peppers all the time so good in chicken Tanga and mix the sauce with sour cream or yogurt and put it on shrimp tacos 😋
I love using my crockpot it’s makes life so much easier. However my husband hates anything out of a crockpot😩He said growing up that’s all his mom used and he got so tired of crockpot food😆🤦🏻♀️
I love slow cooker recipes so thank you for sharing them.....the cheesecake made my mouth water! Hope you got your sink fixed!
I did!
After having double stuff Oreos I call regular ones diet Oreos way before they came out with the Oreo thins lol
That's why a no-bake cheesecake is the best in the summer you don't need anything but a pie plate and a whisk lol
To make whipped cream, you must confectioner sugar instead of granulated.
Literally just going to search your channel for slow cooker meal ideas and this popped up. Perfect timing! Thank you!😊
Oh, I'm so glad I could deliver! :)
This video was just in time for me to use the new crockpot I got yesterday! I never thought to blend all ingredients into the ninja first. What a game changer!
I know I've said this before, but I always look forward to your videos.
Thank you so much! It's tough to keep up in the summer so I really appreciate the encouragement! :)

You should try stabilized whip cream! It uses gelatin to help it set and not turn runny! Game changer for me, used it for my son's birthday cup cakes for his outdoor party.....in July!

Agree with you on both the food processor and Oreo fronts! I don’t want them if they’re not Double Stuffed!
That barbacoa made my mouth water! Yum!
Yum that barbacoa looks delish, and my favorite dessert of all ! Will need to try those recipes..thanks for sharing
Mindy, you look great!

These looked great, I love using my crockpot during the summer. Is there a recipe link for the smoked sausage dish?
How long did you cook the pasta? On high? For the sausage pasta recipe.
