Msemen is my absolute favourite Moroccan food along with siffa. I always have it when I visit my family in morocco and I'm lucky as my other grandmother lives close to me so we always have it when breaking our fast in Ramadan or eid! I like to have them with chocolate spread 😹

Unfortunately, due to Corona we can't get to him, so I decided to see if I could find a tutorial. I've made msemmen myself watching this video. They are very similar to certain type of what we call "byrek" in my native country Albania. I grew up eating this kind of msemmen but the dough was worked with melted butter and I mean butter from grass fed cows milk, unpasteurized and the taste was heavenly. The difference is that we put a dish between 2 msemmens which is basically, a mix of ricotta cheese, crumbled feta cheese, a bit of yogurt, a bit of chopped parsley and an egg. You mix them all well and as you make one msemmen you put a tbs of the mixture on top of it, spread it well over and then you put another msemmen on top of the first msemmen with the mixture and you stick the sides altogether using you fingers. You can bake them (they get crunchy) or put them on the pan. The real taste of the old world. Cheers to Alia and her sweet grandma.

Your grandma is so strong!. Thanks for sharing. we cook the sweet dish same way in southern parts of India but filled with grated/ground coconut& jaggary or sugar, we pan fry with ghee or butter.
Use different flour whole meal flour so you wouldn’t get the same taste with it. Moroccan use white flour so there’s already sugar in the dow itself so there to totally different as it a sweeter and better taste.
I remember first time I had a paratha, I was far away from home and therefore, from my mom's kitchen... I thought : "Oh God, those are JUST like smemen!!" The Pakistani by my shop must have thought I was weird for ordering a crazy amount of paratha every week without any curry :D

yes, you can mix oil with butter - but this is how my grandmother makes it, in a regular day. she does not always use butter. There is no "trustworthy" with culinary art. Every person makes dishes their own way and bring their own touch to them - there is not just one single way of making it. Cooking is all about reflecting your tastes and what you like. :-)

salaam,so far i learned how to cook tajines,make salads,exept this Msemmen thing easy recipe but hard to make,using all purpose flour seems almost imposible,i worket the dough until my hands got tired,nah i will skip try something elese,your mom got some golden hands,hats ff.
O this is my favourite, I spent long weekend in Tanger and in our hotel every morning old lady make this for us, God bless her and her hand, this flatbed with honey and yogurt what else you need to feel happy all day.

salam Alia , this is similar to Algerian Mellwi but we make it round shape . the Msemmen in algeria is Mellwi or (what u did) and they add to inside it The fat of the sheep which it will melt during the cooking. . another tip the mellwi or mesmen you prepared . if you shred it and put on it sugar or honey become erfiss. thanks a lot . I learned a lot from you .

This doesn't taste anything like Paratha. This tastes so much better. I recommend to try this and have it with honey 😍♥️♥️
