James, I’ve not seen a single sheet sand paper anywhere. If you haven’t, give each coat of of varnish a very light sweep with a very fine sandpaper before applying the next coat to smooth it off (de-nibbling) which will give you a much shinier finish.
Definitely put sink in front of window. Makes the boring chore of doing dishes more pleasurable. Cabinet fronts are looking very nice sir! Can't wait until doors and counters are on. It will look fantastic. You'll need to clean the front of fridge and washer so everything looks picture perfect!

It's looking fab, James. I Have A Question: You showed us the little curved braces at the top of the glassfibred corners. Could you cut a full length corner brace to stick to the insides ?
But where space is very limited, a Belfast sink would be an unnecessary and expensive luxury. There are great options out there for 'homes with limited space' like narrowboats.
Not how I would have done it but I must admit it looks very good, sink in middle of window, imho. Now you say sink in the middle, may I suggest a stainless steel sink as a Belfast sink would be very heavy and although the cabinets are looking good they may not support a Belfast sink, maybe
The new cabinet does look better, especially as you've applied the varnish. I agree with the placement of the sink and agree that the Belfast (which we call a farm sink) would look good and be useful, as it seems deep. Question: Is the fan on the fireplace/stove supposed to make that noise (like the blades are hitting something)? As always, James, well done. You are creating a beautiful home. Leigh
The terminology does the job it's supposed to do: using words to convey a meaning which I at least can understand. I suspect i am not alone in this regard. Perhaps "professionals" have their own archaic terms, guarding their masonic brotherhood with arcane terms from the middle ages. Well, that's fascinating and good on 'em for it. But equally, it's refreshing sometimes to see and hear a non-professional working things out for himself and taking us along for the ride, with all its ups and downs
I'm no expert but personally I think the sink smack bang in the middle would be better. Having off centre to the window would mess with my equilibrium lol x

Top Sink tip. just make sure the draining board is towards the front so water drains into the sink and not flow over the work top.
You’ll need some worktop either side of the sink to stack dirty on one side and clean on the other. So mid window is favourite.
