Chef, I remember as a youngster, inside the agriculture building at the state fair of Texas they used to give free sample biscuits made with powdered milk. Man, those were some of the best biscuits ever!!! 😢

Lamination is so key to having a light, flaky biscuit or scone. It’s all in the technique. I’m careful to not overwork the dough, and I get nice flaky, crumbly dough. ❤️you have hands of a master biscuit maker!

I just happen to have some bacon fat that has solidified because of the cooler weather now. I think I'll try this recipe. Hey chief, My family back in the day use to make biscuits the same way except the used water. No milk. All of them are deceased. Would you have a recipe for that? They used water, flour, lard, salt and baking powder. She use to put the biscuits in a cake pan then put then over top boiling water to let them rise, then finished them off in the oven, and if i am not mistaken she turn the broiler on to brown them.

If you have a store that sells Latino food, sometimes they sell the rendered lard which they get from frying up the cracklings that they also sell. Mainly in Texas. I have also seen this in grocery stores in Louisiana.

You can use 1 cup milk and 1 tablespoon lemon juice to make buttermilk. Let it sit for a few minutes. You'll know the difference 😊

Bacon Up bacon grease. Sold in shortening/oil section
