Bread making tips: Typical bread recipes have about 1.5 to 2% of the flour weight in salt. So whatever weight your flour is weigh out an appropriate amount of salt for your bread while you still have the scale out. Any dough will be very sticky just after the first mixing. Leave it be to hydrate in the bowl for about 20 minutes covered with a wet towel just after bringing it all together. When you come back give it some stretch and folds and it will be significantly less sticky. You'll not need to add much more flour if any to knead. I make mostly long fermenting sourdough so all I do is stretch and folds to 'knead' my dough.
